These roasted sesame coconut cashews are addictive. As in one whole level above roasted cashew nuts. As in throw out everything you thought you know about roasted nuts and prepare to be amazed.
And if you like sesame seeds, coconut and cashews, I know you will get what I mean. I remember making various versions of these in Sierra Leone, which my sisters and I loved snacking on as we sat crossed legged on the veranda catching up. Then I somehow forgot about the recipe until very recently. And believe me, I am making up for that.
Freddy is now torn between his staple spicy roasted cashew nuts and these roasted sesame coconut cashew nuts. A problem easily solved by me making and us eating both versions. I see another London Brixton market nut stock up run in my very near future.
One of the things I love about these roasted cashews is that they are made from pantry staples ingredients and require only 5 mins of effort. Easy peasy steps to a quick snack, a movie night treat or erm erm lunch, don’t judge ;).

- Grab hold of a frying pan if dry roasting them without the honey.
- This roasting tin is a good one to use.
- Don’t forget to use a silicon turner for stirring.

How to Roast Raw Cashews
There are two ways to make roasted cashew nuts.
Dry Roasted Cashews
The first way is dry roasting them in a frying pan. You dry roast them in a pan over low heat turning them frequency so that they don’t burn.
This method is quicker than the oven method and I tend to use it when cooking for myself or when wanting a quick snack. You will end up with a few ‘charred’ marks where the nuts are in contact with the pan, which in my view adds that extra flavour to the nuts.
Oven Roasted Cashews
The second way is to roast them in the oven which you can see in more detail below. This is the method I use when entertaining guests.
How To Roast Coconut Cashews.
- Mix together all the ingredients and spread out in a single layer on the tray.
- Roast the cashew nuts for 20 mins turning halfway through.
- Take the nuts out of the oven, let them cool for 2 mins before scraping them off the tray on to a plate and allowing them to cool completely.
Roasted Sesame Cashews Tips
- This method works for both whole nuts or cashew halves.
- The cashews will come out soft from the oven but will firm up as they cool down.
- You need to keep gently turning and breaking the cashews as they cooldown otherwise they will form a ‘cashew bar” and you would have to break this up later on.
- Vary the flavourings according to your taste. You can easily add in some vanilla for example.

Roasted Cashews For Gifting
I have also been packaging these as edible gifts in a jar and giving them to my obviously lucky friends. Which is a win-win situation really. They seem to like them and I have a reason to have to make another batch, which of course I extensively test. Only the best for them Simply whip them up on the day you will gift them, let them cool down and then transfer them to a mason jar before adding your very own homemade with love gift tags. Pretty cellophane bags work too.

Roasted Sesame Coconut Cashew Nuts - Sierra Leone Flavours
Ingredients
- 3 cups cups (450g) roasted unsalted cashew nuts
- 3 tbsp honey (natural honey if Paleo)
- 3 tbsp unsweetened shredded coconut
- 1.5 tbsp sesame seeds
Instructions
- Preheat the oven to fan assisted 120C / 140C / 275F / gas 1 and lightly oil a lined baking tray.
- Mix together all the ingredients and spread out in a single layer on the tray.
- Roast the cashew nuts for 20 mins turning half way through.
- Take the nuts out of the oven, let them cool for 2 mins before scraping them off the tray on to a plate and allowing them to cool completely.
