A Herbed Quinoa Salad
Eat this herbed quinoa salad for the perfect taste of summer. Suitable for Vegan and Gluten Free Diets. Post Includes Weight Watchers points.
A few weeks ago, I was convinced that summer had finally hit the UK. We had something like three whole days of sunshine in a row. Yeap three whole days is a pretty good sign right?
So yes you guessed it, we hit the BBQ, the beach, we indulged in ice lollies, we went for walks AND I even laid out on the sun lounger and read and entire book in the sun. Coming from an African, this is a pretty big deal. Yes, I was in full on summer mode. For a WHOLE THREE days. You can see how this story is going to end right?
Yeap, rain the whole week after that including on the Miss N’s sports day. Oh the fun of watching sports, in the chilly drizzle, on a soggy muddy field. Kids loved it though.
Luckily, the British weather has nothing on my determination to pretend that it is the summer. So I have been indulging in my summer time herby quinoa salad. It is simply quinoa chockablock full of fresh herbs, vegetables like cucumber, radishes and sweet peppers, all drizzled with some balsamic vinaigrette.
Honest, I eat this herbed quinoa salad, I close my eyes and I see and feel the sun in my mind. At the end of the day that is all that matters.

This is a great any day kind of salad. Beautiful and colorful, I bet it tastes great. Quinoa is the great addition to salad. This colander looks fabulous too!!!
Um, yum! I can’t wait to take this to my next summer potluck. It looks so fresh and delicious!
Your salad looks glorious and sunshiny and I wish I had a bowlful for my lunch. I’m loving the sound of that OXO colander too. Washing grains is always a bit problematic.
Exactly.
Ahh look at all that amazing color! Quinoa is such a wonderful addition to a summer salad. It takes a salad to the next level in keeping me full.
I feel that it is a lighter way to get full.
This salad looks awesome. Love salads made with fresh produce!
I’m still hopeful that summer will return to us! Here in Bristol its rain / sun / rain /sun repetitively so we just have to dash out when we can! I love quinoa too and this colander looks amazing! Will need to investigate.
Oh the colander is good.
Lovely colourful salad Bintu and what a great colander from Oxo! Thanks for linking to my salad:-)
Sorry to hear that you’ve been teased by summer! I’m on the total opposite of that spectrum – I’m a Canadian-born gal who has moved to the Southern US and I’m experiencing my first scorcher in the South. I don’t think my maple syrup blood can take this heat! Haha.
This salad is a perfect solution, though. It looks so cool, crisp, and refreshing!
I hope you get some warm weather. I’ll send you some of mine! I need a break 😉
Oh sooooooo happy to change the weather with you.
This salad absolutely says summer. I love the pop of the red and green. These colors make the salad look so fresh.
Thanks Peter.
What a gorgeous salad no matter what the weather. We are unspeakably hot here in Georgia. I could go for a nice recipe like this.
Isn’t the weather just making it so hard to decide what your fancy eating?! Do love salads with something filling such as quinoa or cous cous.
Looks like a lovely fresh salad. Would go great with barbecued meat! I might even grill the bell peppers first too.

This looks like such a perfect summer salad… if indeed our summer ever comes back! That colander looks great too, my sink get filled with stray bits of quinoa every time I rinse it in my sieve!
I like that you added plenty of greens and herbs to this salad. I think the added veggies makes this a winner for a summer salad. We don’t eat a lot of quinua in my house but I think this amount is just the right serving for the salad. You get a bit of everything. Perfect for summer.
We have so many greens and gerbs at them moment that it is pretty easy to add them.
I know you have put summer in the title of this salad, but I would eat this year round.
Now that is the spirit.
Sorry you only had a glimpse into summer! At least this quinoa salad looks so light and refreshing. Love all the herbs.
The quinoa salad has been making up for the lack of summer.
Hey, glad to see you again! I love the colours and flavours in this salad, definitely one to try!
Oh my gosh, long time no chat.
We have actually just finished eating a quinoa salad. It’s a nice way to add a bit of extra protein.
Exactly Dannii.
