These Cinnamon and Allspice Baked Tomatoes are one of the easiest summer eats I make.
What is great is the fact that you need only 5 pantry ingredients and 5 mins of prep to whip up these roasted tomatoes. But the real magic is the fact that they can be served as a side dish, an appetizer or even as the main dish
Seriously, there is nothing better than biting into some warm bread, wrapped round the spiced tomatoes, as the juices run down your arms. In fact the kiddoes relish the chance to get as messy as they can eating these. Or is that just me?

Why Roast Tomatoes?
Roasting tomatoes is one of the easiest ways to use up tomatoes that are about to pass their prime. It is also a way to add flavour to a batch of tasteless tomatoes as caramelizing them removed the water an intensifies their flavour. Plus they do taste great roasted.
Tips For Making Roast Tomatoes
- Use any large tomatoes that you like.
- I like slow roasted them but you can speed up the process by increasing the oven temperature.
- Feel free to swap spice (and herbs) to your taste – I have used caraway seeds, garlic, rosemary, and thyme depending on what I am serving them with.
Baked Whole Tomatoes
You can bake whole tomatoes in the oven too. You will not get that caramelising that you get with cut tomato edges and you may need to cook them a little longer.
Baked Tomatoes With Balsamic Vinegar
To make baked tomatoes with balsamic vinegar, simply omit the spices and drizzle on some balsamic vinegar instead. It is that simple.
Baked Tomatoes With Breadcrumbs
Another great idea is to make baked tomatoes with breadcrumbs. Season the tomatoes and add them to the baking tray, then sprinkle on the breadcrumbs and drizzle on a little bit more oil and bake. Just remember that they will no longer be gluten-free.

This makes me think of the Moroccan roasted tomatoes that I love so much. The spice combo going on here is the best!
We love roasting tomatoes when we get a big batch of them from our garden.
This unusual recipe provides such great flavors and its so simple to make too. Its nice to find a tomato recipe, as normally tomatoes are used to add flavor to dishes and not used as a main ingredient.
Oh wow. I love the sweetness of baked tomatoes and the addition of cinnamon sounds just stunning!
wow, what a great combination of ingredients. I would never have thought of this. Good thinking 😉
Oh yes warm on warm bread. Now I am drooling! What a great idea. Sometimes the simplest recipes are the tastiest. Stumbled, pinned and tweeted.
I’m a huge fan of slow roasted tomatoes! Seriously, I make it all the time, I’ve never thought to add cinnamon and allspice before, I’m so going to give this a go on my next batch. I’m actually quite excited!:-)
My work here is done then Elsa.

These baked tomatoes sound totally yummy and something a little different. Thank you for linking to my chutney:-)
No worries Camilla.
I cook tomatoes on the BBQ with Mediterranean spices but might try your suggestions next time.
Enjoy Heidi.
these look wonderful. Nothing like baked tomatoes in flatbreads, and love the idea of some warm feta with it. Glad the kids love it too!
Yeap Nazima – with all those lovely spiced juices.
I would never have thought of cinnamon on tomatoes – but why not. Perfect for topping a salad (especially when tomatoes are not as intensely flavoured as they could be).
Exactly – the spices jazz up tomatoes and then some.
I’m such a fan of fresh tomatoes but at the same time, cooking really does intensify flavours so well and the spices sound a perfect match for tomatoes!
I agree with everything you have just said Kavey 😀
These tomatoes look great!!! I’ve never spiced my tomatoes but I sure will have to try now!!!! 😀
😀
Baked Cinnamon and allspice tomatoes with chilli and herb baked feta cheese, some quick yoghurt flatbreads and some chilled wine or lemon iced tea…..wow. Can I come round yours for dinner!? I would never have thought to put cinnamon with tomatoes but you’ve totally sold it to me.
You are very welcome Emma.
I love slow roasted tomatoes, I bet these are wonderful with all the aromatic spices. GG
They really work well especially on tomatoes that don’t taste of much.
Interesting choice of spices Bintu, I’m gonna have to give this one a go 🙂
