What Are Spring Rolls?
In general spring rolls are an Asian snack made with a rice paper wrapper that’s usually filled with things like pork, shrimp, cabbage and bean sprouts that are then deep fried.
However, this dessert spring roll is a bit different. It’s made with the same paper-thin wrapper but it’s filled with dessert fillings. And this recipe isn’t deep-fried, it’s air fried – which makes it a healthier version. Win-win!!!

Ingredient Notes
- spring roll wrappers – these can also be called egg roll wrappers, but don’t confuse them with summer spring roll Vietnamese roll wrappers. Thet aren’t the same.
- ripe bananas – the more ripe, the better…but don’t wait too long. ๐
- peanut butter – we prefer creamy peanut butter for this recipe.
- water – for sealing the wrappers shut.
- melted peanut butter – again we prefer creamy peanut butter for this recipe, but you can usecrunchy. It will definitely change the texture though.

How To Make Banana Spring Rolls In The Air Fryer

- Preheat Air Fryer to 350F / 180C.
- Separate wrappers and place one on a plate.
- In a bowl, roughly mash bananas until smooth and then stir in 2 tablespoons of peanut butter.
- Place about 1 1/2 tablespoons of banana filling into each wrapper, fold the sizes and then roll the spring roll tightly. Dip your finger in the water and pat it on the edge to seal. You really want the wrappers to seal, or they will burst.
- Repeat until you have no more wrappers.
- Place in a single layer in an air fryer (you can spray with some cooking spray to help them crisp up more if you prefer, but this optional) and air fry for 6-8 minutes.
- Check at the 6 minute mark and then check every minute after until you see golden brown. If you cook them too long the bananas might start bursting out the sides.
- Remove and drizzle with melted peanut butter, or serve on the side for dipping.
Air fryer temperatures will vary depending on the type and model, so use the cooking time as a guide only and adjust as needed.

Make These In The Instant Pot with Air Fryer Lid
- Spray the Instant Pot insert with a non-stick cooking spray.
- Add the prepared spring rolls into the Instant Pot with the seam side facing is down, in a single layer.
- Be sure to leave space so the air can get in between them to cook evenly.
- Place the air fryer lid on the Instant Pot, set to 400F / 200C and cook for 8-10 minutes.
- Spring rolls are done when they are golden brown and crispy.
Make These On The Stove Top
- Heat about an inch of oil in a medium skillet over high heat.
- Cook the spring rolls for 1-2 minutes per each side until they are golden and crispy.
- Drain on kitchen paper towels before serving.

Recipe Tips
- You can add a little extra peanut butter if you wish when rolling up the wrappers.
- You don’t need to mash the banana – you can halve them lengthwise and cut to fit the wrapper.
- You can mash the banana to be smooth or a rougher mash depending on if you want some texture.
- Feel free to serve with ice cream for a real treat.
- Don’t put too much filling in or you won’t be able to close it up easily.
- It’s important to seal them properly and cook with the seam side down.
Delicious Variations
- Swap banana– swap out your banana for a plantain.
- Add on some other drizzle sauces– to go along with your melted peanut butter, try some Nutella, chocolate sauce, honey or caramel drizzle sauces.
- Add on garnishes– you can’t go wrong by adding on powdered sugar, cinnamon, whipped cream, chopped peanuts, walnuts, pistachios, other nuts of your choices, etc.

Storage
- Prep Ahead– These are so simple to make. But if you need to make them ahead, I wouldn’t prep them more than 12 hours ahead as you’re already using ripe bananas and you want to make sure they stay edible once mashed or cut.
- Store– Store in an air tight container in the refrigerator for up to 3 days.
- Reheat– You can toss them back in the Air Fryer to reheat at 300F / 150C for 3 minutes. Add an additional minute if necessary.
