Just imagine it. Seasoned juicy chicken breasts, with tender crisp peppers and charred onions, creamy avocado and romaine lettuce all drizzled with a fresh lime cilantro dressing with a little hint of spice.

It is fresh, light and yet filling. What more do we need, right? You end up with a real restaurant-quality salad that is easy to whip up at home that will become one of your ‘go-to’ fakeaways. You can make the chicken fajitas in the Air Fryer, in the oven or on the grill and bbq. Just depends on what you prefer. I give instructions for a few different ways of cooking them.

Ingredient Notes

  • Greens : Use any nice crisp greens that you have lying around. I love romaine and baby gem with a mixture of other leaves, but it is up to you.
  • Chicken : This recipe calls for boneless skinless chicken breast which have been cut into about 1/4 inch thick strips. I know friends who are always cooking these with boneless skinless chicken thighs with great success. Skinless boneless chicken breast worked well with this to keep the calories lower.
  • Bell Peppers – You need sliced bell peppers. I love using yellow bell pepper and red bell pepper but feel free to use which ever colour peppers you like. And cut them to about the same size as the chicken strips.
  • Onion – This recipe calls for red onion slices but feel free to use which ever color onion you prefer.
  • Avocado : Lovely creamy sliced avocado complements the zesty flavors.
  • Seasoning : best to use a simple homemade one like this affordable homemade Fajita Seasoning, or get a store bought version.
  • Salad dressing: Simple flavors of honey, lime, oil, cilantro and green onion and chili complete this salad. Vary the oil you use, the type of chili like jalapenos and chipotle etc.

How To Make Chicken Fajita Salad

Make Chicken Fajitas In The Air Fryer

  1. Preheat Air Fryer to 350F / 180C.
  2. Mix the sliced chicken, onion slices, bell peppers, olive oil and fajita seasoning in a large bowl until everything is evenly coated.
  3. Add the mix into the air fryer basket and air fryer for 14-18 minutes, tossing a few times during cooking.
  4. Mix all the ingredients for the Chicken Fajitas in a bowl and make sure everything is fully coated.
  5. Add the mix into the Air Fryer basket and cook for 14-18 minutes turning halfway through.
  6. Serve air fryer chicken fajitas as a salad (low carb) or as fajitas with toppings of your choice.

Make In A Grill Pan

  1. Preheat grill pan or grill grates over medium high heat.
  2. Mix all the ingredients for the Fajita salad chicken in a bowl and make sure everything is evenly coated.
  3. Add the mix to the grill pan or grate and cook for about 14-15 minutes or until these are cook through and veggies are tender crisp, making sure to turn occasionally.

Chicken Fajita Salad Dressing

  1. Mix together lime juice, olive oil, honey, chopped green onions, chopped fresh cilantro, chopped chili to taste (optional) and salt until combined.
  2. Adjust seasoning on this cilantro lime vinaigrette to suit your taste.

Assemble Fajita Chicken Salad

  1. Assemble the salad, starting with the lettuce, then adding the chicken fajitas and sliced avocado.
  2. Then drizzle on as much salad dressing as you want, serve immediatelt and enjoy!

Tips For Success

  • Cook time depends on the size of chicken strips and onion slices and bell pepper slices. So if you cut them small, then you might want to cook for a couple of minutes less than this recipe states. Also smaller pieces will char more than larger pieces.
  • Feel free to add more lime or more chili to suit your taste.
  • The chicken is ready and safe to eat when a the internal temperature reads 165 degrees F.
  • Try and make sure the chicken pieces are all the same size so they cook at the same rate.

  • If I am short on time or spices, I just use a mix of paprika and cumin to make this.
  • Feel free to double or triple the Fajita Chicken Salad recipe to serve a crowd.

Delicious Variations

This version of lime chicken salad is as good as is. But if you want to then you can mix and match veggies, herbs, and spices to your taste.

Other ingredients you can add in include:

  • Grilled corn, radishes, tomatoes, jalapeños, Lime zest, smoked chipotle paste and pickled onions.
  • Vary the protein – you can use skin on breast or other protein like shrimp or turkey or skirt steak.
  • Vary the seasoning – you can use taco seasoning,

Favorite Toppings Ideas

Enjoy mixing and matching your favorite toppings on this. Just make sure the toppings fit whatever diet you may be following

  • For colour and flavour you can top with a little fresh cilantro and shredded romaine lettuce.
  • I prefer avocado and cilantro lime vinaigrette and sour cream, but you can use Lime Crema, or plain greek yogurt with a little lime juice mixed in or ranch dressing.
  • Salsa or Pico de Gallo works well. In a pinch just use some sweet fresh tomatoes diced up.
  • Cheese – use your favorite shredded cheese or some Cotija.
  • You can add extra vegetables and buli with items like refried black beans, charred corn and rice and extra cilantro.

Homemade Fajita Seasoning Mix

Fajita seasoning mix is a blend of paprika, ground cumin, garlic powder, cayenne pepper, chili powder, oregano that you can easily mix together and store in your pantry.

This homemade Fajita seasoning recipe is a good baseline and you can adapt and change as you see fit. Start with 1 to 2 teaspoons of the fajita spice in each recipe and you can always add more to taste.

Chicken Fajitas:

  • 1 lb (450g) skinless chicken breast cut into chunks
  • 3 bell peppers deseeded and sliced
  • 1 onion peeled and sliced
  • 2 tsp olive oil
  • 1 tbsp fajita seasoning (see notes to make your own fajita seasoning mix)

Salad:

  • 4 cups salad greens or lettuce of your choice (I love using multi-colored leaves as makes the salad pretty)
  • 2 avocadoes sliced

Salad dressing:

  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1-2 tbsp honey
  • 1 tbsp chopped green onions
  • 1 tbsp chopped fresh cilantro (coriander)
  • chopped chili peppers to taste (optional)
  • salt

Instructions

Make Chicken Fajitas In The Air Fryer

  • Preheat Air Fryer to 350F / 180C.
  • Mix all the ingredients for the Chicken Fajitas in a bowl and make sure everything is fully coated.

  • Preheat Air Fryer to 400F / 200C / gas 6.
  • Mix all the ingredients for the Chicken Fajitas in a bowl and make sure everything is fully coated.
  • Add the mix to a rimmed baking tray and cook for 18-24 minutes turning halfway through.
  • Serve air fryer chicken fajitas as a salad (low carb) or as fajitas with toppings of your choice.
