If you haven’t figured it out by now, I looooooove making one-pot meals. The less I have to clean up, the better. And these Instant Pot Chicken Fajitas do not disappoint in that aspect.
Creating recipes that can be cooked in one pot, or even better, in my trusty Instant Pot is totally my jam. My family love enchiladas, quesadillas, tacos, taquitos and fajitas. So of course I am going to try this shredded chicken fajitas recipe in my pressure cooker. It tastes just like what we order from our favorite Mexican restaurant.
This Instant Pot Fajita Chicken recipe is one to add to your Dump and Start Instant Pot collection. It’s sooooooo simple to make. Just cut everything up, dump into the Instant Pot, press start and you’re done. Yeap, peeps, they’re that easy!!

How to Make Instant Pot Chicken Fajitas
Get complete ingredients list and instructions from the recipe card further below.
- Add the chicken breasts and 1 cup of chicken broth to the Instant Pot and sprinkle with taco seasoning and garlic.
- Add the sliced bell peppers and onions on top of the Chicken, try to distribute them in an even layer.
- Place the lid on, lock and turn the valve to sealed position.
- Set to Manual / High Pressure for 7 mins.
- When cook time is complete, allow for 5 mins natural pressure release. Then perform a quick pressure release to allow any remaining steam to escape.
- Open the lid and take out the bell peppers and onions. Place in a shallow dish.
- Remove the chicken, place it on a cutting board and shred.
- Squeeze some lime onto your Pressure Cooker Chicken Fajitas and garnish with parsley.
- Serve with tortillas and your choice of toppings. Enjoy!
Make Crockpot Chicken Fajitas
No Instant Pot? No Problem! You can make these chicken fajitas using your slow cooker instead. Here’s how:
- Add all of the ingredients to your slow cooker, plus 1 cup of diced tomatoes.
- Place the lid on, and cook for 3-4 hrs (I recommend 3 1/2 hrs) on high, or 6-7 hrs on low.
- Remove the chicken from the slow cooker and shred. Serve shredded chicken with the bell peppers, onions and tortillas.
Recipe Tips
- Cooking time does not include time needed for the Instant Pot to come up to pressure or for the pressure to release.
- If you’re looking to make shredded Chicken Fajitas in Instant Pot, you may want to add on an extra few minutes of cooking time to make them slightly more tender and easy to shred. Keep in mind, this may cook your veggies longer and make them mushy and fall apart.
- If you’re lucky enough to have leftovers of this recipe, you can use as a base for meal prep. Add to sandwiches and rice or pasta dishes throughout the week.
- Thinly sliced chicken breasts work better for this recipe than thicker cuts.
- Get the toppings ready and warm the tortillas whist waiting for this to finish cooking.

Chef’s Tip: It’s important that you do NOT skip out on the chicken broth if you’re afraid of your chicken and vegetables becoming too soupy. You need to have some liquid (broth or water) in the Instant Pot so it can come up to pressure. To keep your chicken from being submerged, place a trivet in the Instant Pot insert and then put your chicken and vegetables on top of that.
Prep Ahead And Storage
Freezer prep for uncooked mix – Just slice everything up, making sure to cut your vegetables in thicker strips. Then place the ingredients in glass meal prep containers or freezer-safe plastic storage bags and keep in the freezer for up to 3 months.
To cook your frozen Instant Pot Chicken Fajitas, simply dump the mixture into the Instant Pot and cook following the directions above. Remember that when cooking from frozen, make sure to add an extra 5 minutes to the total cook time.
Storage – Store cooked fajita mix in an airtight container in the fridge for up to 4 days. Freeze – let cooked mixture cool down, then freeze in meal prep containers or flat ziploc bags with all the air removed and freeze for up to 3 months.

FAQS
If you are meal prepping and want to just use frozen chicken, you absolutely can. All you have to do is add the frozen chicken and veggies to your Instant Pot and cook for an extra 5 minutes.
If you have fresh chicken that you want to freeze and use for this recipe later, then I recommend slicing it up in strips first and then freezing it to use
You absolutely can. What you would need to do is cut your chicken in thin strips and cut your peppers and onion in larger strips. The reason why you cut the veggies in large strips is so that they don’t get soft and mushy when cooking.
You would then cook your fajitas for 4-5 minutes in the pressure cooker. I suggest cooking them for 4 minutes the first time and se how you like them. An add another minute if you prefer.
Absolutely. This recipe is gluten-free, as long as you make sure that you use gluten free tortillas. Check your local grocer or market as there are a ton of options available.

Instant Pot Fajitas Toppings
Since this recipe is so easy to prepare, you’ll have plenty of time to get your toppings out and set the table while the Instant Pot does the work for you. Here are some totally tasty topping suggestions for you to try: shredded cheddar cheese, hot sauce, avocado slices, sour cream, diced tomato, black beans, fresh made pico de gallo, Mexican rice, quinoa, corn.
Fajita Seasoning
Whilst you can use store bought fajitas seasoning, feel free to whip up a batch of this homemade seasoning.

- 1.5 tbsp fajita seasoning
- 3 bell peppers (1 red, 1 yellow & 1 green), sliced in thicker slices

- 8 small corn or flour tortillas

Yummy Easy Instant Pot Chicken Fajitas
The chicken turned out great! But I caution against putting the veggies in. They were mushy and I threw them out, but they may have helped to flavour the chicken. I suggest just quickly pan frying the peppers and onions while the chicken cooks. I would make the chicken again.
Iโve cooked chicken in broth on the bottom and cooked rice In a pot in pot above it resting on a tall trivet. The rice being higher cooks much slower. It worked great. I think you could do the same here with the peppers and onions. Not sure about adding some liquid to them but I think the steam would keep them moist.
If doubling, does the IP time need to be adjusted?
How is this good?? Following instructions to a T and got overcooked dry chicken and soggy mushy vegetables. Would give 0 stars if I could.
