Whenever I declare that I’m serving a salad for dinner, my DH is always concerned that it won’t be filling enough. But this protein-packed version is the one exception. Loaded with chopped lettuce, creamy mozzarella, and savory salami, this hearty chopped salad is a classic Italian grinder on a plate. And because it’s super flavorful and filling, the whole family gives this satisfying salad the thumbs-up.

Just like my wedge salad recipe, it’s a versatile no-cook dish that’s perfect for a quick and easy weeknight meal, adding to a summer picnic spread, and a crowd-pleasing option for potlucks, parties, and game day gatherings.

  • Chickpeas –  Also known as garbanzo beans, these legumes add a nutty flavor and a hearty texture to the salad, as well as a boost of protein and fiber. Cannellini beans or kidney beans can be used as alternatives, providing a similar texture and taste.
  • Yellow Bell Pepper – Any color of bell pepper can be used, such as red, orange, or green, depending on your preference or what’s available.
  • Tomato – Diced tomatoes add brightness and acidity to the salad. Cherry tomatoes or grape tomatoes can be used instead of diced tomatoes for a different presentation.

Ingredients

  • 4 cups (800g) lettuce
  • 8 ounces (200g) fresh mozzarella
  • ¼ pound (100g) salami sliced
  • 1 cup (164g) chickpeas
  • 1 (120g) medium yellow bell pepper cut in cubes
  • 1 cup (283g) diced tomato
  • 1 cup (150g) sliced cucumber
  • ¼ cup (45g) black olives

Mustard Dressing

  • ¼ tablespoon (60ml) olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon dried oregano
  • 2 garlic cloves minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper

Instructions

  • Combine lettuce, mozzarella, salami, chickpeas, bell pepper, diced tomato, cucumber and black olives in a large salad bowl or on a serving platter.
  • Make the mustard dressing by adding olive oil, mustard, vinegar, oregano, garlic, red pepper flakes, salt and pepper to a small bowl or lidded jar. Stir or shake well to fully combine.
  • Pour the dressing on top of the salad, toss lightly to coat, serve, and enjoy!
