This colourful and healthier Pistachio and Pomegranate Frozen Yogurt Bark is an easy to make yogurt snack or dessert that the whole family will love. It needs only 4 common ingredients and a few mins to make.

This Pistachio and Pomegranate Frozen Yogurt Bark!!! This, right? Isn’t it just the most perfect sounding dessert in the whole wide world? I certainly think so as do the kiddoes and we are really excited to share the recipe with you.

One of the best things about this Pistachio and Pomegranate Frozen Yogurt Bark is the fact that it’s soooooooo simple that anyone (even the kids) can make it. We need only 4 pantry staple ingredients, a bowl, a freezer dish and a few mins to whip it up. That’s it guys.

Just as easy as this Christmas Fruit Salad.

To slightly sweetened Greek yogurt, we add nutty pistachios and ruby red pomegranate seeds and we end up with a colourful, fun and healthier dessert. And if we double or triple the recipe we end up with enough frozen yoghurt snacks to feed a crowd.

This simple frozen yogurt recipe certainly makes an easy Christmas dessert, hot summer day cooler, after-school snack, a healthier me time treat, Mother’s Day eat and a way to use up all the extra fruits or yogurt you have laying around.

How To Make Yogurt Bark

Let me show you how easy it to make this Pistachio and Pomegranate Frozen Yogurt Bark.

Step 1. Mix together yogurt and maple syrup in a bowl.

Step 2. Decant yogurt into a silicon baking tray, spread it out evenly using a spatula.

Step 3. Top the yogurt with the pomegranate seed and pistachio nuts.

Step 4. Tap the tray a few times so the seeds and nuts slight sink into the yogurt.

Step 5. Freeze for 4 hours, break and serve.

Serving Your Frozen Yogurt Bark

  • You need to keep the yogurt bark in the freezer so that it stays frozen.
  • So the best thing is to break it into bits before storing them in the freezer in Ziploc bags.
  • Only take out the amount you need about 5 mins before you want to serve it and leave it at room temperature so that the ice crystals melt a little bit.
  • Then serve it (with some tissues for any messy eater)

Frozen Yogurt Recipe Tips

  • Do use full-fat Greek yogurt for a creamier bark.
  • You can also start with a fruit yogurt if you prefer, just keep an eye on the sugar content as you might need to skip the maple syrup.
  • I suggest sugar-free maple syrup as I am keeping the calories low in this but feel free to use regular maple syrup or honey if you prefer
  • If you don’t have a silicon baking tray, then line a sheet pan with some baking parchment and use that instead. At the end simply lift out the yogurt bake using the paper and peel the paper off.

Greek Yogurt Bark Variations

This recipe is highly customisable and you can mix and match the fruit and nuts according to what you have in your fridge. Here are a few variations you can try, but do remember to experiment away.

  • Strawberries and Blueberries
  • Mango and Raspberries.
  • Cereal and Strawberries
  • Unicorn Frozen Bark (with multi coloured sprinkles).

Ingredients

  • 2 cup (500ml) low fat Greek yoghurt
  • 1.5 tbsp maple syrup (optional)
  • 3 tbsp pomegranate seeds
  • 3 tbsp pistachios nuts chopped

Instructions

  • Mix together yogurt and maple syrup in a bowl until combined.
  • Decant yogurt into a silicon baking tray and spread out the yogurt to an even thickness and pop any air bubbles that may be in the yogurt.
  • Top the yogurt with the pomegranate seed and pistachio nuts.
  • Gently lift and tap the tray a few times so that the pomegranate seed and pistachio nuts slight sink into the yogurt.
  • Freeze for 4 hours, then break into bits and serve or store in the freezer.
