- Chicken breast– this uses boneless skinless chicken breast. Try to get thikcer ones so their is enough to stuff.
- Veggies – asparagus, bell peppers and tomatoes are the low carb veggies I used in this. Feel free to use other low carb veggies like cauliflower instead.
- Flavorings – a combination of oregano and lime juice gives this dish it flavor. feel free to use other spices / herbs and blends to taste like Italian seasoning, Greek seasoning etc.
- Cheese – Use the best melty mozzarella. you can find.
- Oil – A bit of oil to bring it all together. Use any mild flavoured oil of your choice.

How to Make Prosciutto Wrapped Chicken Step by Step

- Preheat oven. Lay the Prosciutto out on a lightly oil baking tray in preparation for wrapping the chicken.
- Use a knife to slice a pocket in the chicken along the length of the chicken making sure not to slice through the other side.
- Stuff the chicken breast with the mozzarella and sprinkle on half the oregano.Wrap the chicken breast in the Prosciutto.
- Add the asparagus, baby plum tomatoes and bell peppers to the pan. Then top the chicken and vegetables with the remaining oregano, a drizzle with olive oil and a squeeze of lemon
- Bake for 20-25 minutes until chicken has reached an internal temperature of 74C (165F). Check the temperature using a digital thermometer.

- Double the recipe if you’re looking to feed a crowd.
- Always cook chicken to an internal temperature of 74C (165F). Add extra cook time if your chicken breasts are thicker.
- You can make the chicken breasts in your Instant Pot and finish up in the oven. You can take frozen chicken breasts and cook them in no time with your Instant Pot. Check out my Instant Pot Chicken Breast recipe if you’re cooking from frozen. Once the chicken breasts are cooled, slice into and follow the recipe below. Place in oven until mozzarella cheese is melted.
- There is some prep work involved with slicing the chicken and cutting the vegetables. If you’re feeding a crowd or have some time before the dinner rush, you can slice ahead of time and place in the fridge for use later that day.

- You can also add in delicious pesto to your baked wrapped chicken breasts for a little more Italian flavours.
- I made a mozzarella stuffed chicken breast, but other soft cheeses like cream cheese would also work really well too.

- Prep ahead – prep everything ahead of time and keep in the fridge for up to 24 hours before hand.

How Long to Cook Stuffed Chicken Breasts
It depends! My cheese stuffed chicken breasts were perfect out of the oven after 25 mins at 180C (400F).

Ingredients
- 8 slices Prosciutto
- 1.5 lb (675g) chicken breast
- 4 tbsp chopped mozzarella
- 1 tsp dried oregano divided
- 9 0z (250g) asparagus woody stems removed
- 2 cups (250g) baby plum tomatoes
- 1 bell pepper deseeded and chopped into large chunks
- olive oil
- squeeze of lemon juice
Instructions
- Preheat oven to 400 F / 200C / Gas 6.
- Lay the Prosciutto di Parma out on a lightly oil baking tray in preparation for wrapping the chicken.
- Use a knife to slice a pocket in the chicken along the length of the chicken making sure not to slice through the other side.
- Stuff the chicken breast with the mozzarella and sprinkle on half the oregano.
- Wrap the chicken breast in the Prosciutto.
- Add the asparagus, baby plum tomatoes and bell peppers to the pan. Sprinkle on the remaining oregano and drizzle the olive oil and a squeeze of lemon juice all over the chicken and vegetables.
- Bake for 20-25 mins until chicken has reached an internal temperature of 74C (165F).
Notes
- Fully cook the chicken to 74C (165F). You can check with a thermometer around 20 mins. Make sure juice runs clear.
- Slice chicken and prepare vegetables ahead of time if necessary.
- Customise by swapping out asparagus for long stemmed broccoli or try a different soft cheese.
