Ingredients

  • 1 tbsp olive oil
  • 6 pork sausages
  • 2 tbsp rolled oats
  • 1 320 g (11oz) sheet ready rolled puff pastry
  • 1 egg beaten
  • 2 tbsp sesame seeds

Instructions

  • Preheat the oven to fan-assisted 160C / 180C / 350F / gas 4 and lightly oil a lined baking tray.
  • Split the sausage skins, remove the meat and add to the mixing bowl along with the oats. Mix until well combined.
  • Transfer the thawed pastry sheet onto a lightly floured surface and cut into half lengthways.
  • Shape half the sausage mix into a sausage and lay in the centre of the pastry sheet, all along the length of it.
  • Brush the edges of the pastry sheet with the egg and roll the pastry so that it encloses the meat, forming a long sausage roll and use a fork to seal the join.
  • Cut into 8 equal sized pieces (or 4 large ones if you prefer).
  • Repeat with the remaining pastry sheet and sausage mix.
  • Transfer the sausage rolls onto the baking tray, brush with the beaten egg and sprinkle on the sesame seeds.
  • Bake in the preheated oven for 25-30 mins until golden and cooked through.

I adore wild garlic! Great idea to pair it with sausages! And whilst Guinness is not something I like, and I can’t eat puff pastry this has certainly inspired me for the wild garlic season which is on its way. Lovely ideas Bintu.

my goodness it doesn’t help I’m starving as I’m looking at this. Could you please mail some? oh, and I’m down for those lazy picnics too. But please mail some.

  7. These look divine. We’ve never cooked with wild garlic before…this looks like the perfect recipe to try. With St. Patrick’s Day coming up, these look perfect with (what else) Guinness!

  8. Your recipe sounds very convenient to me and I will definitely forward your suggestion to all of my friends that eat sausages. Unfortunately I do no eat processed food and I follow a gluten free diet the past 10 months .
But I must mention that the star here is the guinness sausage of course… and I think you picked the perfect flavor! Leeks and garlic match perfectly… Happy St. Patrick’s day! 🙂

These look and sound delicious. I’ve been a vegetarian for 7 years but the one thing I miss is a good sausage roll. If I could stomach eating meat, I would be all over these. I’ll have to recommend them to other people and live vicariously through them.

  10. Sausage rolls are truly a favourite of mine! It helps living in Australia because there are so many delicious ones available. The wild garlic sounds absolutely delicious and I’ve never actually tried to make sausage rolls using sausages – which makes perfect sense now – I’ve always just used mince.

    1. Sausages (like these ones) already come with such nice flavours so makes life easier to use them.
