I didn’t know what I was missing until this grilled chicken wrap recipe! It’s part chicken quesadilla featuring red onions, feta cheese and black olives, and part avocado toast with avocado, lime and garlic. Plus it makes excellent use of leftover grilled chicken. Mind. Blown.

I absolutely loooooove using leftover chicken for this recipe to make it frugal and extra affordable. Both leftover Grilled Chicken Tenders or Grilled Chicken Kabobs Skewers are such flavorful and convenient addition.

  • Grilled chicken — Tender grilled chicken breast is a versatile protein that can be seasoned any way you like it. If preferred, use chicken thighs or your favorite protein as a substitute. 
  • Red onion — Fragrant and spicy, red onion gives a little kick. Use sweet or yellow for a milder flavor. 
  • Avocado — Creamy, nutrient rich avocado really shines in this wrap. Don’t skimp here!
  • Tortillas — Use your favorite type of tortilla here — white, whole wheat, spinach wrap. 
  • Black olives — The earthy taste of olives is a nice contrast to the tang of feta and the bite of red onion. Leave it out or change the type of olive, if you like. 
  • Feta cheese — This creamy, tangy cheese adds a salty note to the mixture. You can swap in goat cheese, ricotta or shredded cheddar cheese if you like, or leave cheese out altogether. 
  • Garlic — Minced garlic adds a spicy, deep flavor to the spread. Sub with dried minced garlic or garlic powder if desired. 
  • Mayonnaise — This helps the avocado get creamy enough to spread. You can also use plain Greek yogurt as a healthier option than mayo, or bump up the flavor with Ranch dressing.
  • Lime juice — The avocado spread needs the acid of lime juice to balance the richness of the avocado. It serves the dual purpose of keeping the spread fresh.

Step 1. Mash the avocado with a fork in a small bowl. Add the garlic, mayonnaise, lime juice, and black pepper and stir to combine.

Step 2. Heat the tortillas in a skillet or microwave. Spread avocado in the middle of each tortilla and top with chicken, onion, olives, and feta cheese.

Step 3. Assemble by folding the bottom up onto the filling and then folding over each of the sides.

Step 4. Press the sides together as you roll the wrap closed. Repeat the process using the rest of the tortillas.

  • Store—You can store these wraps in the refrigerator in an airtight container for up to 3 days. However, the tortilla can become soggy, so I prefer to store the leftover ingredients and assemble a fresh wrap. 
  • Freeze – While you can freeze cooked chicken, it’s not advisable to freeze the assembled wrap.

Ingredients

Wrap

  • 6 tortillas flour or corn
  • 2 cups (200g) grilled chicken
  • 1 red onion sliced
  • 2 tablespoons black olives
  • 3.52 ounces (100g) feta cheese

Avocado Spread

  • 1 ripe avocado medium size
  • 1 garlic clove minced
  • 3 tablespoons mayonnaise
  • juice of half a lime
  • ¼ teaspoon ground black pepper

Instructions

  • In a small bowl, mash the avocado with a fork. Add garlic, mayonnaise, lime juice and black pepper and stir to combine.
  • Heat the tortillas in a skillet or a microwave. 
  • Spread avocado in the middle of a tortilla, then top with chicken, onion, olives and feta cheese.
  • Assemble by folding the bottom up onto the filling, then each of the sides. Press and roll up. Repeat the process using the rest of the tortillas.
  • Cut wraps in half (if desired) serve, and enjoy!
