This classic appetizer gets a modern upgrade when you cook stuffed mushrooms in air fryer. They cook quickly, and the need for excess oil is eliminated.   • Parmesan – Freshly grated parmesan cheese tastes great and melts nicely. 
  • Cream Cheese – Bring regular cream cheese to room temperature. Substitute low-fat cream cheese if desired. 
  • Cheddar – Sharp cheddar brings a nice tanginess. Use mild cheddar or your favorite shredded cheese. 
  • Salsa – Add mild salsa or marinara sauce for flavor. 
  • Ranch Seasoning – You can measure from a packet of ranch dressing mix or look for the larger containers that are perfect for using in recipes. 
  • Dried Herbs – A touch of oregano, dried sage, or your favorite dried herb adds flavor. 
  • Salt and Black Pepper – Add kosher salt and ground pepper to taste, substituting with garlic salt if preferred.

How To Make Air Fryer Stuffed Mushrooms

  1. Bring the cream cheese to room temperature. 
  2. Combine the softened cream cheese, cheddar cheese, half of the shredded parmesan cheese, salsa, and the seasoning in a small bowl. Blend until creamy and well combined. 
  3. Wipe the mushrooms clean with a damp paper towel and remove the stems, leaving the caps intact.  
  4. Evenly divide the cheese-filling mixture between the mushroom caps. 
  5. Place the stuffed mushrooms in a single layer in the air fryer basket and bake for 15 minutes at 375 degrees F / 190 degrees C. 
  6. While the mushrooms bake, combine the breadcrumbs and the remaining grated Parmesan cheese in a small bowl.
  7. Open the air fryer and sprinkle the mushrooms with the breadcrumbs mixture. Air fry for 5 more minutes to crisp up the topping or until golden brown.

Expert Tips 

  • You don’t need to oil the air fryer mushrooms, but spraying the air fryer basket with olive oil will prevent the mushrooms from sticking to the tray. 
  • You can blend the filling by hand. Alternatively, you can use a hand mixer or toss everything into a food processor and pulse it a few times until combined. 
  • I prefer to wipe the mushrooms with a damp cloth or paper towel to clean them but feel free to wash them if you prefer. 
  • Chop the mushroom stems and add them back into the filling mixture or freeze them to add to soups or other recipes. 
  • If you have smaller mushrooms, you can use a spoon to gently press down the gills to create a larger cavity in the mushroom cap.
  • Don’t be afraid to pile on the filling.
  • Cook mushrooms until they are tender, adding additional time as needed. 
  • If you have any leftover filling, stir it into your scrambled eggs for a delicious breakfast. 
  • Mushrooms should not be slimy. Discard any that are slimy or have a fishy odor.

  • Prep Ahead – Prep and fill the mushroom caps up to 24 hours in advance and store them on a tray covered in plastic wrap in the fridge until ready to cook. 
  • Store – Leftover mushrooms will keep for 2-3 days in the fridge stored in an airtight container. Reheat for 3-5 minutes at 400 degrees F / 204 degrees C. 
  • Freeze – Stuffed mushrooms are best made fresh, but they can be frozen before being cooked. Just follow these steps:
    • Assemble the mushrooms as directed and place them on a baking sheet.
    • Flash freeze, then transfer to a freezer bag for up to 3 months.
    • Cook from frozen, adding additional time as needed until the mushrooms are cooked, and the cheese is melted.

Can I Make Air Fryer Stuffed Portobello Mushrooms?

Yes! This recipe works great for Portobello Mushrooms and makes a great meatless main dish. The filling will fill 2-3 extra large Portobello Mushroom caps, and the cooking times will be the same. 

How Long To Cook Stuffed Mushrooms In Air Fryer?

Exact cooking times can vary slightly between brands and styles of air fryers. The mushrooms will cook for about 15 minutes. Then you will add the topping and cook for 5 minutes for a total of 20 minutes. You will be looking for the cheese to be soft and melty and the breadcrumb topping to be golden and crispy.

What Are The Best Mushrooms To Use For Stuffed Mushrooms?

For this recipe, you will want to select mushrooms with a larger cap that can hold the filling. White mushrooms or brown button mushrooms are readily available and make a good option. Our favorite mushroom is the Baby Bellas for flavor and size. You can also use the larger portobello mushroom caps to serve this as a meal rather than an appetizer. 
Fun Fact: Button, Baby Bellas (cremini mushrooms) and portobello mushrooms are the same variety of mushrooms at different stages of growth!

Ingredients

  • 15 Baby Bella mushrooms
  • 3 ½ tablespoons panko breadcrumbs
  • 5 tablespoons grated parmesan cheese
  • ½ cup (91g) cream cheese
  • cup (28g) shredded sharp cheddar cheese
  • 3 ½ tablespoons mild salsa or marinara sauce
  • 1 teaspoon Ranch seasoning
  • teaspoon dried oregano or dried sage
  • salt and pepper to taste

Instructions

  • Bring the cream cheese to room temperature.
  • Combine the cream cheese, cheddar cheese, half of the parmesan cheese, salsa, and seasonings in a small bowl. Blend until creamy and well combined.
  • Wipe the mushrooms clean with a damp paper towel and remove the stems, leaving the caps intact.
  • Evenly divide the filling mixture between the mushroom caps.
  • Place the stuffed mushrooms in a single layer in the air fryer basket and bake for 15 minutes at 375 degrees F / 190 degrees C.
  • While the mushrooms bake, combine the breadcrumbs and the remaining grated Parmesan cheese in a small bowl.
  • Open the air fryer and sprinkle the mushrooms with the breadcrumbs mixture. Air fry for 5 more minutes to crisp up the topping.
  • Remove from the air fryer, cool slightly and serve immediately.
