Oh my goodness. It has been a cRAZy year and time has flown by so fast. I have been having sooooooooooo much busy fun growing this little corner of the internet. And I would not have it any other way. So much so that I actually forgot to celebrate my 4th blogging birthday.
So yaye, happy birthday Recipes From A Pantry. Here is to an even better year 5.
I am going to take a couple of weeks off this Christmas, to hang out with the family, have fun, bond, recharge, think up new recipes and ideas and come back in January and start up all over again.
I have been working on some easy peasy quick christmasy recipes, As part of my ‘not much cooking’ relaxation plan for the next couple of weeks.
The sort of minimal cooking that requires defrosting one of the 20 puff pastry sheets in my freezer, and topping with just 3 ingredients and baking. Like this caramelised onion, brie and brussels sprout tart. Quick to put together, quick to cook, and it looks and tastes delicious.

Caramelised Onion, Brie And Brussels Sprout Tart {4 Ingredients)
Ingredients
- 5 brussels sprouts
- 1 puff pastry sheet defrosted
- 4 tbsp caramelised red onion chutney
- 200 g brie sliced
- 3 tbsp of pomegranate seeds optional
Instructions
- Slice the brussels sprouts into thin discs using a mandolin.
- Preheat the oven to fan-assisted 180C / 200C / 400F / gas 6.
- Lay the puff pastry sheet on the non-stick baking tray and score a 1cm border round the edge taking care not to cut all the way through. Feel free to make a pattern on the border if you have time.
- Spread on the caramelized red onion chutney before toping with the brie.
- Bake for 15 mins, then remove from the oven before topping with the shredded brussels sprouts, and returning the tart to the oven for a further 5-7 mins until the pasty is puffed round the edges and golden.
- Serve with pomegranate seeds and extra shredded brussels sprouts (if you like some crunch on top).
- Serves 4-6 with a side salad.
My favourite healthy bake is oatmeal cookies. Yum!

Looks like a great range – some of my bakeware could definitely use an update! I do a fair bit of healthy baking but my sugar free flapjacks always go down well with the kids X
