These golden and really easy Hasselback Potatoes are the perfect side dish or delicious main meal. Just think crispy yet fluffy creamy sliced baked potatoes topped off with a seasoned oil and fresh herbs. So so good.

The thinly sliced crevices that are unique to Hasselback potatoes are ideal for holding in all the flavourful seasonings. In this case Creole Seasoning along with aromatic parsley, thyme and garlic. What are Hasselback Potatoes?

The Hasselback potato is a type of baked potato that has been cut about halfway through with thin slices, creating an accordion or fan-shaped appearance. The recipe was invented at the Hasselbacken restaurant in Stockholm, Sweden and first appeared on their menu during the 1950s.

How to Make Hasselback Potatoes 

  1. Scrub and dry potatoes thoroughly. Use a sharp knife and make thin vertical slices in the potatoes, making sure not to cut all the way through. Use a pair of wooden chopsticks to keep potato in place while slicing, and to prevent from cutting all the way. Arrange potatoes in a baking dish.
  2. Prepare your seasoning. Peel and roughly vertical slice the onion. Peel garlic and chop parsley. In a medium mixing bowl, add olive oil, dried thyme, creole seasoning, pepper, salt, parsley, onion and garlic. Mix well.
  3. Arrange onion and garlic around the potatoes in the baking dish. Brush the potatoes with the oil seasoning. Make sure it goes between the slices.
  4. Bake for 1 hr at fan-assisted 180C / 200C / 400F / gas 6.
  5. Potatoes must be crispy on the edges and easily pierced in the middle with a knife.

How to Make Air Fryer Hasselback Potatoes 

  1. Scrub and dry potatoes thoroughly and use a sharp knife make thin vertical slices in the potatoes, making sure not to cut all the way through. Use a pair of wooden chopsticks to keep potato in place while slicing, and to prevent from cutting all the way.
  2. In a medium bowl, add olive oil, dried thyme, creole seasoning, pepper, salt, parsley, onion and garlic. Mix well.
  3. Brush the potatoes with some of the oil seasoning. Make sure it goes between the slices.
  4. Preheat the Air Fryer to 350F / 180C and add potatoes into the Air Fryer Basket and air fry for 15 minutes. Open and brush the potatoes with some more of the seasoned oil and air fryer for another 15 minutes or until cooked through.
  5. Potatoes must be crispy on the edges and easily pierced in the middle with a knife.

How To Make Loaded Hasselback Potatoes

  1. Prepare the potatoes and bake till done.
  2. Fry the bacon until crispy.
  3. Remove your crisped up potatoes from oven and load them with most of the bacon, grated Parmesan and shredded mozzarella.
  4. Then bake for another 5 minutes, till cheese is nice and melted.
  5. Top with sour cream, spring onions and the remaining bacon.

Recipe Tips 

  • Larger potatoes may need another 10 minutes.
  • The onions will end up crispy. If you prefer less crispy softer onions, then add in onion and garlic half way thought cooking.
  • For extra flavour, brush the potatoes with extra seasoned oil or butter a just before you finish cooking.
  • You want to make the potato slice between 1/8-inch to 1/4-inch thick. 
  • You can serve Creole Hasselback Potatoes as a main course or as a side dish depending on how many ingredients you load them up with.

Meal Prep, Prep Head And Storing

Prep Ahead – These are easy cut up and to make on the day, but f you want you can slice the potatoes before hand. Simple add the potatoes to a bowl and cover with water to avoid any discolouration. Drain and dry before baking.

Alternatively You can absolutely bake the potatoes ahead of time and store without any toppings for up to 5 days in the refrigerator.

How To Cut Hassleback Potatoes Easily

I just slice them over a curved wooden spoon. However, to make perfect accordion style slits, you can also place the potato between two wooden chopsticks. This will keep the potato from moving, and prevent you from cutting all the way through the potato.

When making sliced baked potatoes, I recommend using a starchy potato with a creamy texture. I have had success using:

  • Yukon Golds
  • Russets
  • Rooster Potatoes
  • Red Potatoes
  • New potatoes (you may need to amend cook time with these)

Easy Hasselback Potatoes

Ingredients

  • 5 medium potatoes
  • 1 red onion sliced in large wedges
  • 4 garlic cloves sliced or minced 
  • 5 tbsp olive oil
  • 1/2 bunch fresh parsley roughy chopped
  • 1 tsp dried thyme
  • 3/4 tsp creole seasoning
  • 1 tsp salt or to taste

If making Loaded Potatoes

  • 10 bacon rashers
  • 5 tbsp sour cream
  • 1 1/2 cups shredded mozzarella shredded
  • ½ cup grated Parmesan finely grated
  • 2 green onions (scallions) sliced

Instructions

  • Make thin vertical slices in the potatoes, making sure not to cut all the way through. Use a pair of wooden chopsticks to keep potato in place while slicing, and to prevent from cutting all the way.
  • Peel and roughly vertical slice the onion. Peel garlic and chop parsley.

  • Bake at 400 F / 200C / gas 6 for 1 hr (bigger potatoes may need an extra 10 mins or so).
  • Potatoes must be crispy on the edges and easily pierced in the middle with a knife.

If Making Air Fryer Hasselback Potatoes

  • Preheat the Air Fryer to 350F / 180C.
  • Scrub and dry potatoes thoroughly and use a sharp knife make thin vertical slices in the potatoes, making sure not to cut all the way through.
  • In a medium bowl, add olive oil, dried thyme, creole seasoning, pepper, salt, parsley, onion and garlic.
  • Brush the potatoes with some of the oil seasoning. Make sure it goes between the slices.
  • Add sliced potatoes into the Air Fryer Basket and air fry for 15 minutes.
  • Open and brush the potatoes with some more of the seasoned oil and air fryer for another 15 minutes or until cooked through.

If making Loaded Hasselback Potatoes

  • Whilst the potatoes are baking or Air frying , fry the bacon until crispy. Put a little of the bacon to the side.
  • Remove potatoes from oven / Air Fryer and add the remaining bacon, grated Parmesan and shredded mozzarella.
  • Then bake for another 5 mins, till cheese is nice and melted.
  • Top with sour cream, spring onions and remaining bacon.
