Because easy is good. As in really, really good, especially when it comes wrapped up in the form of this 7 ingredient slow cooker jerk chicken stew. Quick – tick. Weeknight meal – tick. Oh and can I mention easy again?
So this 7 ingredient slow cooker jerk chicken has
4 spring onions (scallions)
Jerk seasoning paste
Brown the chicken (and this part is optional), blend the rest of the ingredients (minus the thyme) into a smooth paste, throw everything into your slow cooker and boom, you are DONE. It only takes 4 hours on high or 8 hours on low. It is one of those recipes that no matter how tired you are, you can just about drag yourself into the kitchen to whip up (I know this). Deliciously spiced flavours with like zero effort. This deserves a yum right?
There is something about the combination of the orange juice and the jerk paste that really works well and infuses a great flavour to the chicken. Oh the citrus, the gentle heat of the paste, and the warming flavours of the all spice, nutmeg and cinnamon – it is all so, so good.
So, I Ioooooove cooking and I love making things from scratch. And I am never ever going to give that bit of the cooking prep up. You know the moment when you get everything out, work out the combination in your head, which flavours will go with what etc, put it all together and it works. And if it does not, you go back to the drawing board and try again. I still get excited about that and I always will.
But peeps, we are living in today’s world, full of busy schedules, kids, work, social media and much, much more. And sometimes all we need are the shortcut recipes that we know are quick, easy and taste good to boot too. This 7 ingredient slow cooker jerk chicken recipe is all about the short cut.
Aka jerk seasoning paste. Personally, I found a paste brand that I love and keep a couple of pots of it to hand. Seriously peeps, do the same. If however, you want to make your jerk seasoning paste from scratch, then check out this jerk seasoning recipe from BBC food. Either way, you will end up with a finger licking good recipe.
And with the weather slowly but firmly dragging us into autumn, I see bowls and bowls of this 7 ingredient slow cooker jerk chicken stew in my and your future. I might even try a few variations with like adding pumpkin in, because well, pumpkin makes everything taste even, better right? Just add some coconut rice and peas.
PS you are totally allowed to have a stash of shop bought rice and peas in your pantry too. It is all about easy people, remember, eeeeeeaaaaasy. Really guilt free easy too.

- 6 chicken thighs
- 2 onions peeled and roughly chopped
- 4 spring onions scallions, roughly chopped
- 3 tbsp mild jerk seasoning paste
- 80 ml (0.33 cup) orange juice
- 2.5 tbsp soy sauce
- 4 sprigs of thyme
- *Preheat 1 tbsp oil in a frying pan over medium heat and brown the chicken on both sides for about 2 to 4 mins. Transfer the chicken into your slow cooker.
- Add the onion, spring onion, jerk seasoning paste, orange juice and soy sauce into a high-powered blender and blend into a smooth paste, before pouring the paste over your chicken and add in the thyme.
- Cover the slow cooker and cook on high for 3.5-4 hours until the chicken is cooked through, adjust seasoning before switching off the heat.
- Serve the jerk chicken stew with some rice and peas or some warm roti and enjoy.
*You can skip the chicken browning bit and just put the chicken straight into the slow cooker if you want. If slow cooking on low then cook for 7-8 hours.
