 These easy Air Fryer Vegetable Kabobs are perfect appetizer, snack, game day fare that is also perfectly healthy. Add a salad to upgrade them to a quick and healthy lunch or weeknight dinner.

Cooked in the air fryer with no oil, these veggie kabobs are suitable for vegan, keto, low carb, paleo, gluten free, and Whole30 diets. Grill cook method also provided. Post includes Weight Watchers points.

These Air Fryer Vegetable Kabobs are a veggie lover’s BFF! Love vegetable kabobs as much as me and make them at least once a week? Perfect. Then you have come to the right place!

Guys whenever I think about making quick, easy, and fun vegetable recipes, the first thing that springs to mind are Air Fryer Vegetable Kabobs. Because let’s face it – wouldn’t you rather spend less time cooking and more time having fun and eating?

These easy vegetable skewers are suuuuuch a great recipe. The fact that they are easy to make and healthy too, and look stunning with little or no effort, is only a bonus right? Also, with a little extra salad or a side of protein these magically become a light yet filling weeknight dinner or lunch. 

I have kept this basic recipe very simple so it is a complete blank canvas and can be jazzed up in any way you want. See flavor variation suggestions below.

How To Make Air Fryer Vegetable Kabobs

  1. Soak 6 wooden skewers in water for 20 mins before needed.
  2. Preheat the air fryer to 390 F (200C).
  3. Thread vegetables onto the skewers.
  4. Place skewers in air fryer and make sure they are not touching.
  5. Cook for 10 mins, turning skewers halfway through the cook time using tongs. 
  6. Since air fryer temperatures can vary, start with less time and then add more as needed.
  7. Transfer Air  Fryer Veggie Kabobs a plate and serve.

Don’t have an air fryer? No problem! Cook these Veggie Kabobs using your grill or barbecue. Just follow these simple steps:

  1. Preheat the grill or barbecue to medium.
  2. Oil the grill plate (make sure use an oil approved for your dietary considerations).
  3. Place vegetable kabobs on a griddle on the hot barbecue or grill.
  4. Cook for 3-4 mins on each side until they are cooked through.
  5. Transfer Grilled Vegetable Kabobs to a plate and serve.

Grilled Vegetable Kabobs Tips

  • You can use other quick cooks veggies too for these vegetable skewers, like eggplant and radishes.
  • Make sure you cut the vegetables to the same size so they veggie kabobs cook at the same rate.
  • Cook time depends on size of vegetablesso start out with less time if you are unsure and then increase accordingly. 
  • Feel free to brush your favorite marinade on the vegetables before cooking. But please note this will change the Weight Watchers points. You can also use some low calorie cooking spray.
  • You can vary the spices and herbs to suit your taste. If following a particular eating program, make sure the spices and seasonings are compliant and program-approved. Mix the seasoning and veggies in a mixing bowl  before threading. See some suggestions below.

 Air Fryer Kabobs Tips

  • Make sure to soak the wooden skewers before using them.
  • Alternatively you can use metal skewers for this.
  • Make sure the skewers will fit inside your air fryer. You can buy smaller skewers, but if you already have longer skewers on hand do what I did and cut them down using a sharp knife to fit in the air fryer basket (I cut mine to 6.5 inches).
  • Air fryer temperatures can vary depending on the make and model, so it is important to always check your food for doneness and adjust the cook time as needed.
  • You can cook these on a hot skillet on the stovetop.

Air Fryer Vegetable Kabobs Flavor Variations

The great thing about these veggie kabobs is that they are super versatile. You can easily change up the flavor by using a teaspoon or two of different spices and seasonings.

For a taste of the Caribbean, I brush some Jamaican Jerk Seasoning on them.

I love making these Air Fryer Kabobs with Mexican flavor is sooooo tasty. Use a combination of chili powder, cumin, and chipotle to season them in a mixing bowl, before adding to the air fryer.

For a homemade spice mix you can use this =>  homemade fajita seasoning recipe.

Or turn them into spicy Cajun Vegetable Skewers by adding some creole seasoning to the mix. You can also go for more of a classic flavor profile and swap out the paprika and cumin for Old Bay Seasoning. Delicious!

Best Veggies For Grilling

You can pretty much grill any vegetable you like (okay, perhaps not spinach or other leafy greens…but everything with some substance).

The key thing to remember is to keep vegetables that cook at the same rate together. So keep quick cooking veggies on the same skewers and longer cooking veggies on the same skewers. Other vegetables you can add include: 

  • Quick cooking types – like eggplant, radishes, baby corn.
  • Longer cooking variety – potatoes, sweet potatoes and carrots. Do make sure to parboil these veggies to make them cook much quicker.

Ingredients

  • 1 cup (75g) button mushrooms
  • 1 cup (200g) grape tomatoes or cherry tomatoes
  • 1 small zucchini cut into chunks
  • 1/2 tsp ground cumin
  • 1/2 bell pepper sliced
  • 1 small onion cut into chunks (or 3-4 small shallots, halved)
  • Salt to taste

Instructions

Air Fryer Instructions:

  • soak skewers in water for at least 10 mins before using.
  • Preheat air fryer to 390F / 198C.
  • Thread vegetables onto the skewers.
  • Place skewers in air fryer and make sure they are not touching. If air fryer basket is small, you may need to cut the ends of the skewers to fit.
  • Cook for 10 mins, turning half way through the cook time. Since air fryer temperatures can vary, start with less time and then add more as needed.
  • Transfer veggie kabobs to a plate and serve.

Grill Instructions:

  • Preheat the grill (or barbecue) to medium.
  • Oil the grill plate (make sure use an oil approved for your dietary considerations).
  • Place kabobs on a griddle on the hot barbecue or grill.
  • Cook for 2-3 mins on each side until they are cooked through.
  • Transfer to a plate and serve.

    I love veggie kebabs because they don’t try to ‘hide’ the vegetables — they’re full and in your face! I’ve never tried this in an air fryer, but I’m pulling mine out now to give it a go! Thank you!
