How To Make Brioche French Toast Casserole
Get the complete ingredients list and instructions from the recipe card below.
- Begin by lightly greasing a deep baking dish measuring approximately 13 x 9 inches (about 30 x 20 centimeters) with cooking spray. Spread the bite-sized brioche pieces evenly across the prepared dish.
- In a separate bowl, whisk together the large eggs, milk, vanilla, ground nutmeg, and a pinch of salt. Once combined, pour this egg mixture over the brioche in the prepared baking dish.
- Cover the French toast casserole and let it rest for about 30 minutes, allowing the bread to absorb the milky mixture. You can prepare this ahead and store it in the fridge for up to a day.
- Preheat your oven to 350 degrees F / 180 degrees C. Then, bake the French toast casserole for approximately 35 minutes.
- Just before the 35 minutes are up, peel and slice the bananas. Combine them with cashew nuts in a bowl and drizzle them with maple syrup.
- Remove the French toast casserole from the oven and carefully layer the maple-coated banana slices and cashews on top. Finish by sprinkling some brown sugar.
- Return the casserole to the oven and bake for an additional 10 minutes, or until the bananas and cashews are delightfully caramelized.
Tips For Success
- Keep in mind that if you’ve chilled the dish overnight, it’s best to allow it to reach room temperature before baking.
- Also, note that the casserole may puff up in the oven but will settle after resting for a few minutes.
- Sprinkle with a dusting of powdered sugar just before serving!
Delicious Variations
Feel free to mix and match these variations or create your own signature Brioche French Toast Bake to suit your taste preferences and occasion.
- Berry Bliss: Add a mix of your favorite fresh berries like strawberries, blueberries, or raspberries instead of bananas for a burst of fruity flavor.
- Chocolate Delight: Sprinkle chocolate chips over the brioche pieces before pouring the milk mixture for a chocolatey twist.
- Nutty Indulgence: Experiment with different nuts such as almonds, pecans, or walnuts to bring a variety of textures and flavors to your casserole.
- Caramel Drizzle: After baking, drizzle caramel sauce over the top for an extra touch of sweetness and indulgence.
- Spice It Up: Enhance the flavor profile by adding a dash of cinnamon or a hint of orange zest to the milk mixture.
- Dried Fruit: Incorporate dried fruits like raisins, cranberries, or apricots for a chewy contrast.
- Creamy Coconut: Replace some of the milk with coconut milk and top the casserole with toasted coconut flakes for a tropical twist.
Prep And Storage
- Prep Ahead: To prepare as an overnight French toast casserole, follow the recipe instructions up to the point of covering the brioche with the egg-milk mixture. Instead of baking immediately, cover the dish tightly with plastic wrap or aluminum foil and refrigerate the covered casserole for up to 24 hours, allowing the bread to soak in the flavors.
- Store: If you have leftovers, let the casserole cool to room temperature. Cover the baking dish with an airtight lid or foil. Store it in the refrigerator for up to 4 days.
- Freeze: I recommend freezing individual portions rather than the entire dish for convenience. Wrap each serving tightly in plastic wrap or aluminum foil before placing them in a freezer bag or freezer-safe container. This Brioche French Toast Casserole can be frozen for up to 2 months.
- Reheat: When you’re ready to enjoy your frozen portions, simply thaw them in the refrigerator overnight and reheat in the microwave or oven until warmed through. Enjoy your delicious breakfast without the morning prep!
