These Halloween Monster Eye Ball Cookies are an easy Halloween treat to make with only 3 ingredients and a few minutes. They are fun for the kiddoes to make unsupervised.

Easy Halloween Desserts are my jam. Because I want to spend less time cooking and more time having spooky fun with the kiddoes. And it does not get easier than these Halloween Eyeball Cookies Sandwiches.

These spookily awesome cookies are basically a chocolate sandwich cookies that has been glammed up in ghoulish fashion for Halloween.

Here is the thing. You can make these monster eyes cookies the really, really, really easy way. As in => no baking required. Yeap, the kiddoes can whip these up with 3 ingredients and about 15 minutes to make. Plus you start with affordable store bought ingredients which makes these even easier.

Or you can make them in a little bit more of a hands-on (yet still easy way) and bake them from scratch using cake mix, depending on your preference. Luckily, I will show you both ways and you get to decide which you prefer. #yourcookiesyourway

How To Make Halloween Eyeball Cookies Sandwiches

The really easy no bake way;

  • Lay 24 cookies out on a tray.
  • Pipe icing onto one cookie and place a second cookie on top to create your cookie sandwich. Repeat until all done.
  • Stick 2 candy eyeballs on the icing of each cookie sandwich and serve.

The baking first method;

  1. Preheat the oven to 350F / 180C / gas 4 and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cake mix, eggs, oil and flour into a thick batter.
  3. Fold in candy and then shape dough into cookie balls and place on the baking sheet.
  4. Bake for 6-8 minutes, or until the cookies have cracks in the top.
  5. Remove cookies from the oven and let cool fully on a cooling rack.
  6. Pipe icing onto one cookie and place a second cookie on top to create your cookie sandwich. Repeat until all done.
  7. Stick 2 eyeballs on the icing of each cookie sandwich and serve.

Recipe Tips

  • Place your cookie sandwiches in the refrigerator for 30-60 minutes to firm up the icing. This stops it from oozing out when eating.
  • You don’t need to pipe, you can just spread the icing but it will not look as neat. That’s okay though.
  • Feel free to double up the icing for a luxurious cookie.
  • For fun, you could cut out shapes like stars, etc. from the cookie dough before baking.

Variations

  • Vary the cookies – you can use things like white chocolate cookies or oreos to you preference.
  • Add sprinkles – Accessories these with some festive colored sprinkles or shaped sprinkles like a bat, cat, pumpkin, etc.
  • Decorate with colored frosting and colored candy eyes – there’s no reason your halloween cookies can’t have a bright and colorful look.
