Ingredients
- olive oil
- frozen sliced onions, or 3 medium fresh onions
- frozen bell pepper strips, or 2 fresh bell peppers
- salt and pepper
- Jerk Sauce Marinade
- dried thyme
- Soy sauce
- pork tenderloin
- slider buns
How to Make Pork Sliders
- Marinate the pork tenderloin pieces in the jerk seasoning.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the sliced onions and peppers and cook for 2 mins, then reduce the heat to medium-low and cook for 15 mins, stirring frequently.
- Turn the heat down to low and add the soy sauce, salt, pepper and thyme and cook for 2 more minutes.
- Transfer peppers and onions to a bowl and set aside.
- Turn the heat back up to medium and add more olive oil in the skillet..
- Remove pork from marinade, add to the skillet and cook for about 12 minutes, stirring frequently.
- Slice dinner rolls in half and place 1-2 pieces of pork on each bottom piece. Top the pork with the onions and peppers and then serve.

Recipe Tips
- I recommend using Hawaiian rolls, if available.
- Marinade the pork for up to 24 hours in a non reactive bowl.
- Control the heat level by making your very own homemade Jamaican Jerk sauce, see recipe below. Or get a milk jerk marinade from the store.
- Pork Tenderloin Sliders are even more amazing if you toast the bun. You can butter them and broil them in the oven for a few minutes to crisp them up for a little extra crunch.
- Not a huge fan of pork, or don’t have any on hand? You can make these into shredded chicken sliders!
- Feel free to top with coleslaw or pineapple salsa a slice (or two) of cheese.

MEAL PREP AND PREP AHEAD

Prep Ahead – you can dice the onion, slice and deseed the peppers, and cook the meat and sauce in advance, then store and reheat when needed. You’ll definitely want to hold off on assembling the sandwiches until ready to serve, as the bread will get soggy fast.
Meal Prep – pork tenderloin is easy to batch cook and then use for meal prep at the beginning of the week. And since it will stay fresh and tasty stored in the fridge all week long, you can make up all sorts of wholesome meals that will be ready to go just when you need some pork protein for each meal.
And any leftover peppers and onions that you haven’t cooked can be saved and stored in the refrigerator to be used for other meal prep recipes since they’re such a versatile ingredient.

Use these tips to freeze these:
- Make sure you let the pork cool completely before transferring to Ziploc storage freezer bags.
- Press the excess air out of the bags before sealing and label them with the date.
- Place the bags flat in the freezer to store for 2-3 months.

Jerk style of cooking originated in Jamaica where a wet sauce or dry rub is applied to the meat of choice and then cooked. This marinade or sauce tends to be spicy due to the classic use of scotch bonnet (a very spicy pepper option).
Authentic Jerk Sauce should also include the use of allspice and thyme as those ingredients really bring the right Jamaican flavors.

- 1 lb (453g) pork tenderloin cut into ½ inch slices
- 6 tablespoons Jerk Seasoning marinade
- 3 tablespoons olive oil divided
- 3 cups (525g) frozen sliced onions or 3 medium onions, sliced into strips
- 2 cups (350g) frozen bell pepper strips or 2 bell peppers, seeded and cut into strips
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon dried thyme
- 1 tablespoon soy sauce
- 12 slider buns or dinner rolls
