Why Make This Recipe

  • Prep ahead – and cook when needed.
  • Filling – a complete meal in one.
  • Dietary – Plus these are gluten free, low carb, keto and paleo.

Ingredient Notes

  • Shrimp – this uses peeled defrosted raw shrimp.
  • Zucchini – use whichever color zucchini you like, just cut into thin half moons so these cook quickly.
  • Bell peppers – use which ever color bell peppers you want, I prefer the red ones as they are sweeter.
  • Grape tomatoes – Use grape or baby plum tomatoes – leave them whole.
  • Spices and flavoring – The flavor in this comes from paprika, oregano, garlic puree, ground coriander salt and pepper. Feel free to use more or less seasoning to your taste or substitute these with a spice blend to make your life easier.
  • Oil – Olive oil complete the marinade but use canola or peanut oil.

How to Make Shrimp Foil Packets

  1. Light the grill.
  2. Mix together the shrimp, zucchini (courgette), bell peppers, and grape tomatoes.
  3. Mix the marinade ingredients and then coat the shrimp veggie mix.
  4. Split the shrimp mix between 4 sheets of aluminium foil.
  5. Fold edges of foil up around the food into a closed foiled packet.
  6. Grill until shrimp is cooked through.

Air Fryer Shrimp Foil Packets

  1. Preheat Air Fryer to 400F / 200C.
  2. Combine the shrimp, zucchini (courgette), peppers, and grape tomatoes.
  3. Mix the marinade ingredients together and then coat the shrimp veggie mix.
  4. Split the shrimp mix across 4 sheets of aluminum foil packs. Fold edges of foil up around the food into a closed foiled packet.
  5. Cook in batches in the Air Fryer basket for 15 minutes or until shrimp is cooked through (or you may be able to fit it all in an air fryer oven).
  6. When done, carefully remove from air fryer, open the packets, then serve and enjoy!

Make This In The Instant Pot

  1. Mix together the shrimp, zucchini (courgette), peppers, and grape tomatoes.
  2. Mix the marinade ingredients and coat the shrimp veggie mix.
  3. Split the shrimp mix across 4 sheets of aluminium foil packs.
  4. Fold edges of foil up around the food into a closed foiled packet.
  5. Put the Instant Pot Air Fryer Basket into the Instant pot and add in the foil packs one at a time.
  6. Lock the Air Fryer Lid, Select air fryer function, set to 400F / 200C for 18 minutes, and press start.
  7.  Cook until about 15 minutes and check. If not done, then cook for a further few minutes.

Cook In The Oven

  1. Preheat oven to 400F / 200C / gas 6.
  2. Assemble foil packs and place them on a rimmed baking tray.
  3. Bake for 15 minutes or until shrimp is cooked through.
  4. Remove from oven, garnish, and then serve.

Recipe Tips

  • Make sure your foil pack ingredients are in a thin layer inside the packet so they cook quicker.
  • There will be a bit of liquid in the foil packet after cooking, so open them carefully.
  • Cut zucchini into thin half-moons or they won’t cook through in 15 minutes. If you prefer bigger cut veggies, then cook the veggies for 5 minutes before adding the shrimp and cooking as directed.
  • It is best to use heavy-duty foil for these shrimp and vegetable foil packets so the foil does not tear when grilling.

Delicious Variations

  • Vary the spices – Change the spices according to your taste. Cumin, coriander, chopped herbs, chili all work.
  • Vary the veggies – Feel free to substitute the veggies with other quick-cooking veggies like green beans, asparagus, green onions, etc.

How Long To Grill Shrimp Foil Packs

This depends on your temperature and the size of your shrimp and veggies. I suggest about 15 minutes for larger shrimp (turning the packs after about 10 minutes to cook on the other side). After this, you can see how done the shrimp is, then cook for an extra few minutes if needed.

Shrimp Foil Packs For Camping

I have waxed lyrical about how these are great for camping but I want to say this once more. They cook quickly and are soooooo great for this. You can prep the veggies and marinade ahead of time and set these up in the foil pack. Keep the shrimp cool and add in just before you want to cook these.

Ingredients

For the Shrimp foil packets:

  • 250 g (250g) uncooked deveined shrimp
  • 2 zucchini (courgettes)
  • 2 peppers deseeded and chopped
  • 16 cherry tomatoes cut in half or left whole
  • 1 ½ teaspoons butter optional

For the marinade:

  • 1 ½ teaspoons paprika
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic purée
  • salt
  • Bblack pepper
  • 2 tablespoons olive oil

Instructions

Grilling And Campfire

  • Light up the campfire or preheat the oven to fan assisted 200C / 220C / 425 F / gas 7.
  • Add the shrimp, courgette (zucchini), peppers and cherry tomatoes into a bowl.
  • Mix together the marinade ingredients and add to the shrimp mix and mix until combined.
  • Split the shrimp mix across 4 sheets of aluminum foil and split the butter (if using) across the packet.
  • Fold edges of foil up around the food to form a closed foiled packet.
  • If grilling on a campfire or grill, then cook the shrimps foil packets for about 10 mins on one side, then turn over and cook for 5-6 mins on the other side or until the shrimps are pink and cooked through.

Oven

  • Preheat the oven to fan assisted 200C / 220C / 425 F / gas 7.
  • Place prepared foil packets on a rimmed baking tray.
  • Cook for 15-20 minutes until the shrimps are pink and cooked through.

Make In The Air Fryer

  • Preheat Air Fryer to 400F / 200C.
  • Mix together the shrimp, zucchini(courgette), peppers, and grape tomatoes.
  • Mix the marinade ingredients and coat the shrimp veggie mix.
  • Split the shrimp mix across 4 sheets of aluminum foil packs.Fold edges of foil up around the food into a closed foiled packet.
  • Cook in batches in the Air Fryer basket for 15 minutes or until shrimp is cooked through (or you may be able to fit it all in an air fryer oven).

In The Instant Pot

    OMG this was sooooo good. I made these for the grill but like u said anything can change so I threw these in the oven for 20 min, made these with zucchini, yellow squash, green peppers, n large shrimp, added some Old Bay to it, and it was amazing.

    This looks like a great dinner any night of the week. It is so hot here and the idea of cooking outside sounds like a plan to me, especially if it involves shrimp!
