Ingredient Notes

  • Olive Oil – Use your favorite light, neutral flavored oil. 
  • Red Wine – f you prefer not to use alcohol, you can substitute with an equal amount of beef broth or try using a cooking wine with low alcohol content.
  • Beef Stock – Beef stock provides a savory base for the dish. You can use homemade beef stock, store-bought beef broth, or beef bouillon cubes dissolved in water. 
  • Rosemary – Fresh rosemary adds aromatic earthiness to the pot roast. If fresh rosemary isn’t available, you can use dried rosemary, but reduce the quantity to about ⅓ teaspoon, since dried herbs are more potent than fresh.
  • Parsley – Fresh parsley contributes a fresh, herbal note to the dish. You can substitute it with ⅓ teaspoon dried parsley.
  • Bay Leaves – Bay leaves are used to infuse a subtle, aromatic flavor. If you don’t have bay leaves, you can omit them, as they are mainly for enhancing the aroma.
  • Garlic – Garlic adds depth and savory richness. You can use fresh minced garlic or garlic powder.
  • Cranberry Jelly – Cranberry jelly provides a touch of sweetness and tartness. If you don’t have cranberry jelly, other fruit preserves like apricot or raspberry can be used as a substitute.
  • Beef – The star of the dish, round roast beef, is a lean cut. You can also use tenderloin roast, chuck roast or brisket for a richer, more marbled result.
  • Carrots – Carrots add sweetness and color to the dish. Feel free to use baby carrots or rainbow carrots for a visual twist.
  • Potato – Potatoes provide starchiness and absorb flavors. You can use any variety of potatoes like russet, Yukon Gold, or red potatoes.
  • Onion – Red onions add a mild, sweet onion flavor. You can substitute with yellow or white onions if that’s what you have on hand.
  • Salt and PepperSea salt and freshly ground black pepper enhance the overall seasoning.

How To Make Air Fryer Pot Roast

  1. Preheat the Air Fryer to 350 degrees F / 180 degrees C. 
  2. Combine the oil, wine, beef stock, rosemary, parsley, bay leaves, garlic, cranberry jelly, salt and pepper in a small bowl.
  3. In a bowl or ziplock bag, combine the beef roast and half of the marinade. Marinate at room temperature for 30 minutes. 
  4. Select a baking dish or cake pan that will fit inside your air fryer and add the vegetables, along with the remaining half of the marinade. Place in the air fryer to roast for 30 minutes.
  5. Remove the air fryer basket and add the beef on top of the vegetables. Roast until the meat reaches your desired level of doneness. 
  6. Garnish vegetables and beef with parsley. Serve with the cooking juices.

  • Opt for a well-marbled, boneless roast beef like round roast, chuck roast, or brisket. These cuts are more forgiving and become tender and flavorful when slow-cooked.
  • Allow the roast beef to come to room temperature before cooking. This helps it cook more evenly and reduces the risk of overcooking the outer layers.
  • If desired, sear the roast in a hot skillet with a bit of olive oil before air frying. Searing caramelizes the meat’s surface, enhancing its flavor and creating a delicious crust.
  • To achieve the perfect level of doneness, use a meat thermometer to check the internal temperature. Consult the chart above for doneness levels, and adjust the cooking time to suit your preference.
  • After cooking, let the pot roast rest for at least 10-15 minutes under a foil tent. This allows the juices to redistribute, keeping the meat moist and tender.
  • If the sauce is too greasy, skim off excess fat using a fat separator or a spoon.
  • Feel free to customize the vegetable mix based on your preferences. You can add celery, parsnips, or even mushrooms for additional variety.
  • The pan juices make a delicious gravy. Simply strain the liquid, mix it with a bit of flour or cornstarch, and cook until thickened for a flavorful sauce. Or make this easy Gravy instead.
  • This dish can be prepared ahead of time and reheated. In fact, it often tastes even better the next day as the flavors continue to meld.

Delicious Variations on Air Fryer Chuck Roast

  • Make it spicy. If you love a bit of heat, season the roast with chili powder, cayenne pepper, or crushed red pepper flakes. Consider adding spicy peppers like jalapeños to the vegetable mix.
  • Add Mediterranean flare. Use Mediterranean spices like cumin, coriander, and paprika on the roast, or whip up this awesome homemade Tuscan Seasoning mix. Add kalamata olives, artichoke hearts, and sun-dried tomatoes to the vegetable mix. Serve with a drizzle of tzatziki or tahini sauce.
  • Give a citrus kick. Infuse a zesty citrus flavor by adding lemon or orange zest and juice to the cranberry jelly marinade. This brightens up the dish and adds a tangy twist.
  • Make Italian-style pot roast. Season the roast with Italian seasoning or a mix of basil, oregano, and rosemary. Add sun-dried tomatoes, bell peppers, and Italian sausage to the vegetable mix for a Mediterranean-inspired feast.
  • Swap the wine. Replace the red wine with your favorite beer to create a hearty, beer-braised pot roast. The malty flavors of the beer add a unique depth to the dish.

Prep And Storage

  • Prep Ahead – Bring the meat to room temperature for 30 minutes before air frying. 
  • Store – Leftovers can be stored in an airtight container for up to 4 days. 
  • Freeze – Wrap tightly and freeze the meat for up to 3 months. The vegetables may become mushy when frozen so we don’t recommend freezing them. 
  • Reheat – Use the reheat air fry setting on your air fryers or reheat the meat in the microwave.

It’s so easy to cook a tender beef roast in the air fryer. It’s a flavorful and complete meal. 

What temp should pot roast be?

Pot roast can be cooked to your desired level of doneness. Cook to 135-144 degrees F / 58-62 degrees C for medium doneness when checked with a meat thermometer. 

How to make gravy from pot roast juices?

It’s easy to use the pan juices to make a delicious gravy. Simply strain the liquid, mix it with a bit of flour or cornstarch, and cook in a small saucepan until thickened for a flavorful sauce.

What’s the best cut of meat for pot roast in the air fryer?

The best cuts of meat for pot roast in the air fryer are those with some marbling and connective tissue, which become tender and flavorful when slow-cooked. Round roast, chuck roast, and brisket are excellent choices.

Can I make this with frozen vegetables?

While it’s generally recommended to use fresh vegetables for the best texture and flavor, you can use frozen vegetables in a pinch. Just be aware that they might release more moisture during cooking.

Can I make this without an air fryer?

If you don’t have an air fryer you can try our Instant Pot Pot Roast recipe. You can also adapt this recipe for the oven. Sear the meat in a skillet, then transfer it to an oven-safe roasting pan with the vegetables and follow a traditional pot roast recipe.

Roast it in a preheated oven at 325 degrees F / 163 degrees C until the meat reaches your desired level of doneness.

Ingredients

  • 2 tablespoons olive oil divided
  • ½ cup (125ml) red wine divided
  • ½ cup (125ml) beef stock divided
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh parsley chopped

  • 3 pounds round roast beef boneless
  • 1 ½ cup (200g) carrots chopped
