Ingredient Notes

  • Pie Crust – The crust here is your standard refrigerated pie crust from the store or your favorite homemade pie crust recipe!
  • Butter – Butter contributes to the pie’s flavor and texture, creating a luscious and creamy filling.
  • Dark chocolate – You can’t have a chocolate pie without chocolate! Using dark chocolate adds an intensity that plays well with the vanilla.
  • Brown sugar – Light brown sugar sweetens the pie, adding a subtle molasses note that complements the chocolate. Did you know you can make your own brown sugar by mixing one cup of white sugar and one teaspoon of molasses?
  • Eggs – Eggs bind the pie filling together when it’s cooked providing structure and richness.
  • Vanilla – Vanilla extract enhances the overall flavor profile of the pie creating a rich chocolatey flavor.
  • Flour – All-purpose flour helps thicken the chocolate filling, providing structure and stability. It contributes to the final set and texture of the pie.

Pro/Expert Tips

  • Use room-temperature eggs and butter to promote better blending and a smoother texture in the filling.
  • Use high-quality chocolate, butter, and other ingredients for the best flavor. Quality ingredients can significantly impact the final taste and texture of your chocolate pie recipe.
  • Use a 9-inch pie crust for a traditional pie. For a deep dish pie crust use a 12-inch crust.
  • Melt the chocolate gently to avoid scorching. I prefer a double boiler, but others use a microwave in short 10-second bursts, stirring between each interval. This helps achieve a smooth and velvety chocolate consistency.
  • Add eggs one at a time, allowing each to fully incorporate before adding the next. This ensures a well-emulsified filling and prevents the mixture from becoming too dense.
  • Once the flour is added, mix only until combined. Overmixing can lead to a dense texture in the pie. Stop mixing as soon as the ingredients are fully incorporated.
  • Allow the chocolate pie to cool at room temperature before refrigerating. This gradual cooling process helps set the filling properly and enhances the overall texture.
  • The chocolate pie filling can also be cooked for about 10 minutes and it will have a molten cake texture.
  • When preparing the pie shell, fill it with pie weights or beans.
  • Reheat the pie in the microwave for 20 seconds then serve with vanilla ice cream for an absolutely delicious dessert.
  • Top the pie with fresh whipped cream on top.

Delicious Variations

  • Swap the Crust – Instead of traditional pie crust, you can use a graham cracker crust or your favorite pre-baked pie crust.
  • Mint Chocolate – Infuse the chocolate filling with mint extract or add finely chopped mint chocolate. Top the pie with a layer of mint whipped cream for a refreshing twist.
  • Cherry Chocolate – Incorporate cherry compote or pie filling between the crust and chocolate filling. Garnish with fresh cherries or a drizzle of cherry sauce.
  • Salted Caramel Chocolate – Swirl salted caramel into the chocolate filling for a sweet and salty contrast. Top with a sprinkle of sea salt and a drizzle of caramel sauce.

Prep And Storage

  • Prep Ahead – You can definitely prepare this ahead of time and keep in the fridge for short term or the freezer for long term.
  • Store – At room temperature, the pie will keep for up to 2 days. In the fridge, it will keep for up to 5 days. Seal with plastic wrap or an airtight container.
  • Freeze – Freeze the pie for up to 2 months. Wrap in plastic wrap and then aluminum foil as either individual slices or the whole pie.
  • Reheat – To thaw a frozen pie, transfer it to the refrigerator and allow it to thaw overnight. If reheating is desired, warm individual slices in the oven at a low temperature to preserve the texture. (Our family likes to eat them slightly thawed from the freezer!)

FAQs

Can I substitute dark chocolate with milk chocolate in the pie?

While it alters the flavor, you can substitute milk chocolate. Be mindful of sweetness adjustments, as milk chocolate is sweeter than dark chocolate.

How do I prevent a soggy crust?

Prebaking the crust slightly can help prevent a soggy bottom. Also, ensure the chocolate filling is not too hot when poured into the crust.

Can I make the pie without eggs?

Eggs provide structure and richness. You can explore egg substitutes, but it may alter the texture of the pie.

How do I prevent the chocolate from seizing when melting?

Melt the chocolate slowly, stirring frequently. Avoid introducing moisture, and use a dry utensil. If it seizes, try adding a small amount of vegetable oil and stirring gently.
