  • Oil: Select your favorite light, neutral-flavored vegetable oil for frying
  • Cornstarch: Cornstarch creates a crispy coating for the shrimp and keeps this recipe gluten free. 
  • Seasonings:  combine garlic powder, onion powder, salt and ground black pepper. 

For the sauce:

  • Mayonnaise: Use your favorite brand of mayo, swapping in light mayo or plain Greek yogurt for a lighter sauce. 
  • Sriracha: Adjust the amount of sriracha to control the spiciness of the sauce. 
  • Sweet Chili Sauce: A little spicy and a little sweet, chili sauce is the secret to flavorful Bang Bang sauce. 
  • Lemon Juice: Lemon juice adds a tartness to the sauce and compliments the shrimp.
  • Honey: for just a touch more sweetness. You can substitute with pure maple syrup or omit it for a less sweet sauce.

How To Make Bang Bang Shrimp Recipe

  1. Combine the shrimp with the buttermilk in a medium bowl and marinate in the fridge for 30 minutes.
  2. Heat 2 inches of vegetable oil in a deep skillet or wok over medium heat until it reaches 360 degrees F / 182 degrees C.
  3. Drain the buttermilk from the shrimp using a colander. Set the shrimp aside.
  4. Whisk the cornstarch, garlic powder, onion powder, salt, and pepper in a medium bowl. Add all of the shrimp and toss until the shrimp is coated on all sides.
  5. Working in batches, fry several shrimp for 1-2 minutes or until golden on both sides.
  6. Drain them on a cooling rack over a large baking pan or on a plate fitted with a paper towel to catch the extra grease.
  7. Mix all the sauce ingredients in a medium bowl.
  8. Just before serving, toss the shrimp with one cup of the bang bang sauce. Add additional sauce as needed. 
  9. To serve, arrange the shrimp on top of butter lettuce on a platter and drizzle with additional sauce.

Note: Do not overcook the shrimp. They cook quickly and will be firm and opaque. The shrimp may even curl slightly.

  • Dry the shrimp well before soaking it in buttermilk.

  • Store – Store uncoated shrimp in an airtight container in the fridge for up to 5 days. Store the sauce separately if possible. If the shrimp is coated in sauce, it will still keep but will not be as crispy when reheated. 
  • Freeze – You can freeze the leftovers for up to 3 months, but the shrimp tend to become soggy when reheated, so it’s not recommended. 
  • Reheat – Reheat the shrimp in a 350-degree oven for 5-6 minutes or until crispy, then toss in the sauce and serve.

Ingredients

  • 1 ½ pounds (680g) medium or large shrimp deveined and tail off
  • 2 cups (473ml) buttermilk
  • ½ cup (96g) vegetable oil or more, for frying
  • ½ cup (60g) cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

For the sauce:

  • 1 cup (230g) mayonnaise
  • ¼ cup (79g) sriracha
  • ¼ cup (79g) sweet chili sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
