I deem January the perfect month for comforting one-pot meals.
It’s cold and we’re sooooo over cooking complicated holiday meals, so we crave warmth, simplicity, and comfort foods. I think cooking comes in seasons, just like the weather. January definitely feels like the ‘season of simple’ to me, and I find myself wanting to put a few high-quality ingredients in a pot, stir a little bit here and there, and be done with it. Nothing too complicated for me this time of year, please.
Cheesy Quinoa Porridge is the perfect recipe for this cooking season — comforting and made in one pot with just a few quality ingredients. The result is a dish with an incredible flavour that’s ready to be devoured for supper in just about 25 mins.
It’s a miracle that I got to eat this dish at all as Freddy is in love with it with a capital ‘L.’ He loves, loves, loves cheese (he has been known to eat cheese and pickle sandwiches for breakfast) and he is the household ‘cheese thief.’
Anything with cheese often mysteriously disappears under his watch, so I had to be very careful not to turn my back after I finished making this recipe. If I did, I would not have been surprised if the whole pot disappeared and Freddy with it.
I can’t say I can blame him. I made Cheesy Quinoa Porridge with melted Grana Padano cheese (and strips of Prosciutto di San Daniele) which is just about as good as cheese gets.
If you love all things cheese, you may have heard of Grana Padano. If not… your life is about to be sooo much better. Grana Padano is a highly nutritious cheese (loaded with a high concentration of proteins, vitamins and mineral salts), and it’s also highly digestible and lactose-free due to the long ageing period.
Prosciutto di San Daniele is a high-quality prosciutto only made in the Italian town San Daniele del Friuli with a maturing stage of at least 13 months. It is completely free of preservatives and contains only pork meat and sea salt… that’s it.
Both Grana Padano and Prosciutto di San Daniele are so high quality that they’ve been recognized by the European Union as ‘Protected Designation of Origin’ (PDO) products. You can identify PDO products by their unique logo. The logo ensures the origins, as well as that the product is authentic, traceable, and protected.
And, Grana Padano and Prosciutto di San Daniele are Northern Italian products that are produced in an entirely natural way.
With credentials like that, perhaps I shouldn’t be too upset with the household cheese thief if the next batch I make disappears before I even have a bite.
How to Make Cheesy Quinoa Porridge — Ingredients + Video

- Olive oil
- Garlic
- Spring onions (scallions)
- Quinoa
- Cherry tomatoes
- Small cheese rind (I used Grana Padano)
- Chicken stock
- Grana Padano
- Parsley
- Prosciutto di San Daniele
The whole process is so simple and only takes about 25 mins from start to finish.

Cheesy Quinoa Porridge with Grana Padano and Prosciutto di San Daniele {Gluten Free}
Ingredients
- 1 tbsp olive oil
- 1 garlic clove minced
- 2 spring onions (scallions) finely sliced
- 180 g quinoa rinsed
- 10 cherry tomatoes halved
- 1 small cheese rind I used Grana Padano
- 475 ml chicken stock
- 50 g shredded Grana Padano
- Handful of chopped parsley
- 4 slices of Prosciutto di San Daniele torn into bits
Instructions
- Heat the olive oil in a pot over medium heat.
- Add the spring onions and garlic and cook, for 1 minute.
- The add in the quinoa, tomatoes, cheese rind and chicken stock, stir well and cover.
- Bring to the boil, reduce to a simmer, cover and let cook for 15 mins.
- Switch off the heat and stir in the grated cheese and parsley.
- Top with the torn ham and serve.

I totally agree with your January meals theme… one pot, simple, comforting, warm (in my case we’ve have -30 F weather!) and filling. My usual go to is soups, but this looks amazing!
