This cucumber matcha cocktail makes a great afternoon pick me up.

Freddy and I were recently spent a few days on the largest cruise ship in the world. What an absolutely amazing experience that was. There was so much to do and so little time. You had everything in one place – I am talking theatre, comedy clubs, an art gallery, climbing walls, 23 swimming pools, shops, mini golf, nightclubs. You name it, they had it.

 And then the cocktails.  You found fantastic cocktail stalls at every turn with really nice staff who could whip you up anything you desire. We might have tried out quite a few pina coladas, bloody Mary’s, Tom Collins and about 50 million other cocktails. All in the name of research you see.

So back at home on a particularly dull day, I sat my tired self down and daydreamed about a cocktail. Then bam the idea of this cucumber matcha cocktail hit me. I mean take some caffeine, add some alcohol and you end up with the perfect afternoon pick me up cocktail right?

It is an easy to whip up green tea cocktail made from a simple cucumber sugar syrup, powdered matcha green tea, gin, limes and lots and lots of mint. The quantities I have given are soooo flexible so you can easily make it to your taste. Add more cucumber syrup or more lime juice as you desire.

One tip is to first add a little bit of water to the matcha to make a paste, before adding in the rest of the water to avoid ending up with clumps of matcha.

Cucumber Matcha Cocktail

Ingredients

For the cucumber syrup

  • 100 g (½ cup) sugar
  • 125 ml (½ cup) water
  • 10 slices of cucumber
  • 1.25 tsp Matcha green tea
  • 500 ml (2 cup) water
  • 125 ml (1/2 cup) gin
  • 4 tbsp lime juice

For the Cucumber Matcha Cocktail

  • 3 Tbs cucumber syrup
  • Cucumber slices
  • Mint leaves
  • 1/2 lime sliced
  • Ice cubes

Instructions

  • To make the cucumber syrup combine the sugar and water in a saucepan, and heat gently whilst stirring regularly until all sugar has dissolved. Then add in cucumber slices and leave them till the syrup cools completely. Discard the cucumber.

Make the Cucumber Matcha Cocktail:

  • Add the matcha into a good sized bowl and slowly add 2 tbsp of water, a little bit at a time, mixing constantly to make a smooth matcha paste. Then slowly mix in the rest of the water, followed by the gin, lime juice and cucumber syrup.
  • Place some cucumber slices and mint leaves in each cocktail jar and mash with a wooden spoon. Then add in some lime slices and ice before topping up with the cucumber matcha cocktail.
