Hibachi style shrimp is a great dump and start dinner and a total go-to for Japanese nights, weeknight dinners, lazy lunches, and brunch spreads. I love making this recipe with juicy fresh raw shrimp, but you can also thaw some frozen shrimp from your freezer. Easy peasy!

Making Hibachi Shrimp in Air Fryer is also a great way to use those bits of leftover shrimp and leftover yellow squash, zucchini, and peppers that you are not sure what to do with. Add some leftover rice, and you’ve got an affordable yet totally delicious dinner.

Ingredient Notes

  • Shrimp – Either fresh raw shrimp or thawed frozen shrimp. Be sure to use deveined shrimp.
  • Quick Cook Vegetables – Such as yellow squash, zucchini, mushroom, and green bell pepper.
  • Tamari Soy Sauce – Adds great umami flavor. To keep this gluten free, use Tamari soy sauce. You can also choose to use a low sodium soy sauce instead.
  • Sesame Oil – Gives the dish a nice earthy, nutty quality.
  • Olive Oil – Can also use avocado oil or your favorite vegetable oil variety.
  • Minced Garlic and Fresh Ginger – Bring tons of great flavor.

How To Make Hibachi Shrimp In The Air Fryer

  1. Preheat Air Fryer to 400 degrees F / 200 degrees C.
  2. Place the raw shrimp, vegetables, Tamari soy sauce, sesame oil, olive oil, minced garlic and minced ginger in a mixing bowl and make sure everything is fully combined.
  3. Then add half the mixture into the air fryer basket and cook for 8-9 minutes, turning halfway through.
  4. Remove and add the remaining shrimp mixture and cook for another 8-9 minutes.
  5. If desired, garnish with sesame seeds and serve with yum yum sauce.

Tips For Success

  • If you start with frozen shrimp, make sure to thoroughly defrost and drain them before using.
  • This recipe uses jumbo shrimp, not the smaller variety.
  • If you have time, let the hibachi vegetables and shrimp marinate for about 30 minutes, up to 2 hours, making sure to stir everything a couple of times.
  • Try and make sure the veggie pieces are all the same size so they cook at the same rate. Use a sharp knife to slice them.
  • Cook time depends on the shrimp, as you don’t want to overcook these. So make sure you cut your veggies to a good size so that they cook in the allocated 8-9 minutes.
  • Feel free to double or triple the recipe to serve a crowd. But you would need to cook this in more batches.
  • To keep this low carb, serve with cauliflower rice instead of steamed white rice.

Recipe Variations

This version of Hibachi Shrimp is a delicious meal as is. However, you can also mix and match with different spices and vegetables, to suit your taste. If you are swapping veggies, be sure to use quick-cook veggies.

  • Add Citrus – a dash of lime juice or lemon juice will brighten up the flavor profile.
  • Swap The Mushrooms – I like to use cremini mushrooms, but you can swap in shiitake, baby Bellas, or your favorite variety.
  • Customize The Sauce – By adding Teriyaki sauce, rice vinegar, or oyster sauce.
  • Add More Veggies – Green beans, asparagus, bok choy, or celery would all work well.
  • Make It Spicy – Like a little heat? Then add a pinch of red pepper flakes or a dash of sriracha hot sauce.

So what exactly is Hibachi Shrimp Sauce? Also known as Yum Yum Sauce it’s a creamy savory mayo-based sauce normally served with seafood in Japanese steakhouses.

Prep Ahead – Make ahead and refrigerate for up to 3 days in an airtight container.

Ingredients

  • 1 pound (450g) shrimp peeled and deveined (and defrosted if using frozen)
  • 1 pound (450g) yellow squash or zucchini, cut into quarter-inch pieces
  • 1 green bell pepper deseeded and sliced
  • 1 pound (450g) mushrooms halved or quartered, if large
  • 4 tablespoons Tamari soy sauce or regular soy sauce, if not gluten free
  • 2 tablespoons olive oil
  • 2 teaspoons sesame oil
  • 1 teaspoons minced garlic
  • 1 teaspoons minced ginger
  • Serve with Easy Yum Yum Sauce (optional, but highly recommended)

Instructions

  • Preheat air fryer to 400 degrees F / 200 degrees C.
  • Place shrimp, squash, pepper, and mushrooms in a mixing bowl. Add tamari, olive oil, sesame oil, garlic and ginger and toss until fully combined.
  • Add half the hibachi mixture into the air fryer basket and cook for 8-9 minutes, turning over halfway through the cook time.
  • Remove and add the remaining shrimp mixture and cook for another 8-9 minutes.
  • Serve air fryer shrimp hibachi as is (low carb) or along with some yum yum sauce.
