Folks – welcome to waffle Wednesday – where the only thing on the menu are these vanilla buckwheat gluten free waffles with maple pineapple. Nothing else needed, right?

It is obvious that I am a teeny little bit obsessed with waffles. Not much, just you know, a little bit. Like eating orange thyme waffles and plantain waffles twice week and then again on Sundays kind of obsessed. Obsessed to the point that the waffle maker has its own semi-permanent place on the kitchen counter and I have buckets full of milk in the fridge. No running out of milk in this house.

These vanilla buckwheat gluten free waffles are actually about hitting two main goals.

First  – I have been meaning to cook up a gluten free waffle recipe for you lot and have had a pack of buckwheat flour in the pantry for the longest time. It just got hidden behind all the other flours and I plain old forgot.

Secondly to keep the sister food happy. She has problems digesting regular cow’s milk. So I have been using a2 Milk™ which is a fab alternative for people like her. Regular cow’s milk includes the a2 protein and a1 protein. These proteins are digested differently with A1 protein being known to cause bloating, indigestion, cramps and more in some people. a2 Milk™ is produced from specially selected cows that naturally produce only a2 protein.

I love it when recipes come together so neatly like magic. Is self-back patting allowed?? Yes I hear you say. Ok then – back thoroughly patted.

Ok so these  Gluten Free Vanilla Buckwheat Waffles are good. And to be honest are great with a liberal helping of honey or maple syrup. You can certainly stop there. BUT, the maple pineapple – elevates it to something beyond special. So so good.

Tips on How to Make Gluten Free Waffles (Buckwheat Waffles)

Well the main thing about making gluten free waffles is using gluten free flour. In this recipe I have used buckwheat flour. But other flour options include a combination of rice flour, almond flour, polenta and plantain flour.

Another thing to think about is baking powder. Just make sure you buy gluten free baking powder.

Then you simply mix together the wet ingredients and then stir in the dry ingredients. Don’t worry about any  lumps in the batter as these melt away during cooking. Then cook your buckwheat waffles according to your waffle maker instructions and you are done.

Buckwheat Waffles With Maple Pineapple

Ingredients

For the buckwheat waffles

  • 450 ml (1.9 cup) milk
  • 125 g (4.4oz) unsalted butter melted
  • 3 eggs beaten
  • 1 tsp vanilla essence
  • 300 g (10.5oz) Buckwheat flour
  • 1 tsp gluten-free baking powder

Fpr the maple pineapple

  • 1 tsp melted butter
  • 200 g (7oz) frozen Pineapple
  • 2 tbsp maple syrup

Instructions

  • Whisk together milk, butter and eggs and vanilla and set aside.
  • Mix flour and sugar (if usinin a large bowl and make a hole in the center.
  • Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are some lumps.
  • Cook the waffles according to your waffles maker instructions until all the waffle batter is is finished and set aside somewhere warm.
  • To make the maple pineapple – heat the butter in a pot and add the frozen pineapple, allow ice to melt, and leave simmering with the pan open, for a couple of mins. Stir in the maple syrup and cook for about 1 min until the pineapple is well coated. Switch off the heat.
  • Serve the buckwheat waffles topped with the maple pineapple.

    You hit my weekend breakfast sweet spot. I love waffles. Buckwheat reminds me of when we used to make maple syrup in the spring and made pancakes and waffles with this great ingredient.
