I have been craving Christmas cookies so I have been baking these easy peasy orange and cranberry thumbprint cookies.
Have you ever had a Pinterest ‘stop everything’ moment? You know the ones I mean, where you are curled up on your sofa, drinking some chai tea, slowly scrolling through Pinterest and drooling over the whole host of amazing when suddenly you see it. The recipe that makes you stop right there.

So we will be celebrate Easter 2014 with these orange spiced cranberry Easter biscuits. These are seriously good fun to make with children and perfect to give out as Easter gifts.
These delicate cardamom, cranberry and pistachio biscuits are not too sweet, thanks to the low sugar content and the addition of the fleur de sel, which helps the cardamom flavour to shine through; whilst the crumbly biscuit melts in your mouth, there is the fruity-sweet tang and chewiness from the dried cranberries and a crunch from the outer layer of ground pistachio.
Rolos and potato chips are among my favorite road trip munchies, and I just thought they would make the most incredible cookie combo. And they do, though I say it myself. Vanilla-scented dough, creamy, chewy, gooey Rolo candies, and a sprinkling of mini chocolate chips, just for kicks and giggles.
